COMMERCIAL DESCRIPTION
Our third anniversary beer us sizes Chocolate Sombrero, using extra ancho chile and adding chipolte pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

Pours opaque black with tan head and spotty lacing. Aroma of soy sauce , chocolate, pepper, and spice. Taste is caramel/toffee malts, pepper, whiskey, and alcohol burn.

Bomber. This one promptly blew up after I popped the cap... like barrel aged volcano of malt stickiness. Anyway, pours the expected brown black, opaqueness, not much of a head (all the foam was on the counter top). Nose is mainly barrel, some cocoa, hints of vanilla and cinnamon, brown sugar. Mouth is medium bodied, kinda oily, immediately sweet and cocoa, coffee, faint spices mingled with the whiskey barrel. Super-soft carbonation, spiciness mainly noticeable at the back of the throat. Would probably be really good with tres leches cake, or a coconut flan. Finishes a bit warm and boozy. Interesting, but not for the reasons I expected.

Bottle. From a trade - escaping who sent it. Sorry! A: Well, this is interesting. Open cap, and beer spews all over my end table. Whee! Dark black with a thin mocha head that eventually fades. N:Early stages of infection, possibly, but I canít lock it down exactly. Some cherry sourness, chocolate, pepper and some bourbon come and go. T: I canít tell if itís pepper or sourness, probably a bit of both, good sweetness. M: Slick and oily, thinning out a bit. O: Drink it soon, if youíve got it. The spray of beer concerns me, and there is sourness throughout - though it could be acidity from the coffee. If itís not infected, itís a poor version of a pepper RIS. Ultimately, I didnít hate it, but I did drainpour, because itís not worth drinking a whole bottle.

thanks Channing .. . deep brown .. mild foam .. . lots of booze, mild heat, slippery barrel, and peppers .. . quick taste finish, lingering heat .. . one dimensional .. . . my neighborís cat ran away. its gone. i feel bad for eating it for thansgiving. it was delicious.

22oz bottle in a tulip. Pours black with a lacy, tan head. Aroma of roasted malts, some light pepper, light oak/bourbon, a little chocolate and coffee, and a little dough. Flavor the same with a nice blend of the components but a little light on everything. Thicker texture. Could have more of everything, but not a bad beer.

Aroma- Over powering bourbon smell with subtle chocolate, and vinallia. Appearance- Pours dark brown with a little carbonation and head. Taste- Strong bourbon taste, oaky, and dark chocolate with very subtle spice. Palate- Full body and dry fruit. Not much of of chili/pepper taste. Overall- The bourbon was present given that it was barrel aged but the bourbon was a little over powering. I expected a little more pepper flavor.

Bomber at my place with crew. Aroma is malty bourbon barrel. Taste is malty bourbon I guess chocolate. Finish is long and raison nice. Great beer.
