Our third anniversary beer up-sizes Chocolate Sombrero, using extra ancho chile and adding chipotle pepper. We aged the brew 100% in Wild Turkey and Heaven Hill bourbon barrels. May it leap onto your palate majestically, like a luchador who flies into the ring from atop the highest rope.

Big chocolate nose. Taste has alot going on. Chocolate, wood, vanilla, spices. The chili peppers add a great twist but are nice and subtle. Finish is bittersweet. Really nice

Dark black with foamy tan head... Aroma of vanilla, sticky caramel, roasted malts, peppers.... Flavor is intensely sweet and malty, lots of caramel, bourbon and tons of vanilla with peppery backbone... Chocolate sombrero was good, but this is excellent... Bottle, 2013. Pours opaque black, small brown head, creamy, nice lacing. Aroma is chocolate, chili pepper, cinnamon. Flavor is light plus sweet, light bitter, quite spicy, cinnamon, chocolate, jut a bit of bourbon. Medium body, some acidity. Solid.

Bottle to snifter. Pours deep black with a big beige head. Aroma of vanilla, bourbon, chocolate and some smokey wood. Taste is creamy sweetness, excellent bourbon, chocolate, faint peppers. Super smooth mouthfeel. This is great. ---Rated via Beer Buddy for iPhone

Pours pitch black. Aroma is of bourbon, vanilla, roasty malts, but no peppers. But then again this is a bottle that has aging for over 2 years now. Nice and heavy mouth feel with a little bit of a bubblyness to is. Flavors are of roasted malts, bourbon, vanilla, chocolate, and a little heat. VERY nicely balanced. Leaves a sweeter yet heated bourbon aftertaste. This bottle has aged beautifully.

On tap at the Sanctuary. Dark pour. Starts out sweet, dark chocolate flavors. I don’t really get the peppers. Finish is all bourbon and alcohol. A bit hot for the palate, but complex flavors.

Another shared by Adrien, big thanks! 2013 bottle. Pours deep brown, no head. Aroma is dark chocolate, peppers and bourbon heat. Flavor follows. Dark chocolate, mild chipotle, bourbon. Nice.

Bomber 2013 vintage. Aroma is real mild pepper at this point, barrel has mellowed but still shows. Good level of chocolate as well. They flavor is light on the spice (chipotle is mild) and shows me bakers chocolate and mild bourbon in the backend. Carbonation is mildly creamy and soft. The pepper has a very weak hint of heat. Very nice but maybe should have been opened about 6 months ago, that being said, still really nice.

Pitch black tiny dark brown head that faded fast. Smells spicy as all giddyup.Lots of sweet chocolate, faint raisin and port wine with a heavy rye whiskey. This is a little thinner than expected. tons of spice but the pepper doesn’t linger. This is chocolate for miles. just sweet, nutty like peanut, walnut and cocoa. Whiskey finish, lends a sweet dried fruit and cashew with simple syrup and rye. So glad this isn’t really spicy.
