Sampled at the 2013 Chicago Cider Summit. Pours a slightly pale yellow with slightly visible carbonation and an extremely thin head. Aroma has a beautiful combination of dry apple, slight tartness and a dry chardonnay note. Flavor has a musty but dry apple that works nicely with the chardonnay.

Draft pour on tap at Cider Summit 2013 (Navy Pier, Chicago, IL). Pours a richly golden hue, healthy glow with deep summer sunshine glow. A mellow carbonation, gentle whitish ring dies, laces to nothing really. Aromas are sweeter red apples, touches of honey, bit of crisp apple skin. Gentle sweetness starts to grow, straw, touch of grass. Rich flavorful nose. Initial is lighter end of medium, crisp rich apple flavors. Red apple, gentle sweetness grows. Bit of straw, grass, and gentle kiss of honeycrisp. Some mellow yeast, touches of dry cool apples, mellow sweetness, crisp red apples. Backend and finish is red apple skin, touches of sweetness, firmly dry. Really well put together, touch of fuzziness on the finish and backend.

Pour on tap at the CO rare beer tasting 2012, clear yellow pour with thin white head, aroma brought notes of caramel, apples, tart fruits, some vanilla, hints of dry grape, slight oak, hints of almost some spice. Taste is a mix of sweet apple, vanilla, some sweet grape mixing into dry oak, tannins, finishing fairly sweet but slightly dry.

Rackhouse Colorado Rare Beer Tasting. Pours a hazy yellow appearance with a while head. Pear, granny smith apple, light white wine nose. Fairly dry, lightly herbal, spritzy flavor.

Hazy straw yellow color, white head. Sweet, dry, apple, white wine scent. Acidic, dry, apple taste. Butter aftertaste. Spritzy mouthfeel, medium bitterness. Dry finish.

On tap at the cidery. Transparent light golden with a nose of sweet green apple and red apple rind, with a sugary backbone. Taste is off-dry, with some nice mellow apple tones, a light touch of Champagne yeast, and light fruity sweetness, not too sugary or syrupy. Pretty tasty and balanced.

bottle thanks to jjfoodie. crisp gold pour with a thin head of bubbles. nose is sweet, wood, tart, crisp, apples, and dry. very light on the palate, lightly tart, fresh green apples, light barrel note, chardonnay comes through in the finish.
