COMMERCIAL DESCRIPTION
This might be the most unique barrel aged lager you will find. Brewed like a barley wine but fermented as a lager then aged on fresh wet Buffalo Trace barrels for 5 months.

Bomber from The Davis Beer Shoppe in Davis, CA. Pours very dark amber/brown with a 3 finger foamy beige head. Aromas of dark fruits, vanilla and oak? Full bodied. Foamy carb. Flavor is quite bourbon, with some dark fruit and nuts, but it’s alcohol and bourbon, primarily. Almost a cola touch. Oak astringency is very light. Finish is mildly sweet. It really tastes very good.

Overall: batch two is just as big and full of bourbon as the first batch, lighter on the chocolate

Bomber poured a clear reddish amber with a lasting amber head. Aromas bourbon, carmel, molasses, light oak and light fruittiness. Palate was medium bodied and smooth. Flavors of bourbon,carmel, oak, brown sugar and light futtiness with a smooth lingering bourbon finish.

Bottle. Pours clear tawny with a medium, frothy tan head, medium retention with good lacing. Aroma is caramel, cookie, and toast malt, bourbon, oak, dates, plums and earthy hops. Flavor is sweet malt dominant, spicy and peppery bourbon, vanilla notes, dark fruits, oak, light hops and bitterness with a dry finish. Full body, medium carbonation.

UPDATED: JUL 24, 2012 Growler... Lightly hazy caramel-colored beer. No head. The malty, vinous nose is a blend of caramel, red wine, wood and vanilla. Medium to full-bodied with gentle carbonation. The flavor is of sweet caramel, vinous red wine, and just a kiss of acidity. Earthy, caramelly, moderately bitter finish. If the commercial description didn’t mention a Buffalo Trace barrel, I would have assumed Merlot or Cabernet.

Served on draft at Timberwood Grill Charlottesville, VA. Pours a very slightly hazy copper color with a medium sized creamy tan head. Decent head retention. Huge whisky notes in the aroma with notes of wood, coconut and toasted malts. The taste is sweet malts, raisin, wood, berries, whisky and toasted malts. Very whisky forward but still manages to be well balanced. Medium bodied with low carbonation. Better than I was expecting.

Batch 001 bottled 6/1/2011. Pours with a murky brown body with a large tan head of foam with good retention and great lace. Aromas are estery, brown sugar, molasses, bourbon, mild melanoidins, chewy, leather and caramel. Flavors are of barrel, vanillin, bitter with a slightly oxidized hop character. Tannic, caramelized, vanilla, dark fruits, oak, coconut, raisins. Pretty complex with a nice bourbon character. Easily the best beer that I have had from Shmaltz to date. Medium to fuller carbonation for a big beer, warming, with a tannic finish.
