COMMERCIAL DESCRIPTION
It seems natural for Iowa-based Confluence to offer a corn-based brew. But while Iowa corn makes great bourbon, it’s not so good for beer. So we use open-pollinated, heritage organic blue corn grown in New Mexico.

First we perform a cereal mash by boiling the milled blue corn to expose the starches. The resulting purple porridge is then mashed conventionally with barley malt causing the color to magically disappear and creating a super sweet, almost clear wort. The entire wort is boiled and we add enough Saaz hops for bittering without overwhelming the blue corn flavor. It’s then fermented with German lager yeast and lagered as normal. The resulting beer is big for its style and refreshing on warm days with higher alcohol content than the classic American pilsner.

32oz growler, tasted at RBSG. Clear golden color. Thin off-white head. Couple dots of lace. Medium to bigger body. Smooth, kind of soft, lighter carbonation. More dry finish. Sweet corn, bready flavor. Moderate sweet. Tasting like a kind of dry finish. Solid corn lager. Get the blue corn chip flavor overall. I don’t mind it at all.

Growler shared by Jcwattsrugger. Pours clear yellow gold with white head. Nose/taste of apple, corn, sticky syrup and alcoholic fruit. Medium body. Not bad for the style.

Aroma is strong earthiness, mild citrus/fruit and malts. The flavor is pale malts, mild/medium sweetness, relatively complex corn and a mix of fruit and citrus in the finish. As far as pale lagers made with adjuncts, this was actually pretty decent.

Wow, this is really something special. Very clean profile with very distinct corn, little to no bitterness, a floral and grassy aromatic layer, and absent all flaws. All wrapped up nice and pretty in sparkling clear golden beer in your glass capped with a foamy rocky head of perfect white. Very nice.

Tap @ Confluence. Pours a clear light yellow appearance with a white head. Sweet corn, grassy aroma. A bit tangy, lemon, fairly sweet flavor. Ok for what it is but not my favorite. This is a pale lager, not a wheat ale.

On tap at brewery.. light golden clear pour ..white head..funky aroma... taste is a mild malty lager..nothing specual in my book but very easy drinking.. would do again if it was in front of me

Had this on draft at Confluence Brewery in Des Moines. Light golden pour. No head. Light wheat taste with a smooth finish. Not sure if its from the name, but can for sure taste corn
