UPDATED: OCT 11, 2011 On tap at the brewery. Cherry brown pour. looks very still and clear. Balsamic aromas mixed with fruit and nutty caramel. Great level of sour. Puckering but not overpowering. Balsamic vinegar wrapped up in bright fruit and some kind of bread or maybe pie crust (cherry pie) followed by very light wood. Complex and smooth. Medium body creamy underneath all the sour. Yum!

(Draught at CooperSmith) clear red, soapy white bubbles. Nose of sweet sugary cherry, cherry pie, and lightly funky. Taste of tart cherry, real cherry, pucker, plum, currant, light tobacco, cherry skins. Very smooth, soft carbonation, not acidic at all. Just delicious. Could have drank this all day.

Tap @ brewery. Amber red appearance with a small white head. Sour cherry nose. Quite sour and tart cherry lambic flavor. Particularly sour cherries which inclines me to think that it’s made from Poudre Canyon cherries. Sour cherry finish. Pretty good but not elite.

Pours a brilliantly clear deep ruby/garnet color with little to no head. What head does develop is quick-lived and fizzy off-white. Aroma is clean with loads of sour cherries and light toasted oak notes. A bit of alcohol aroma gathers near the end and as it warms. A lightly sweet malt backbone pleasantly supports the tart and sour aromas. Flavor is lightly sweet malt with a puckering sour cherry dominance. Little to no hop bitterness is present, and even if it were, the tart and lactic sourness would overpower it. A slight oak and wine character is also present, with a dry finish. Medium bodied with a mouth-watering sourness.

Flavor is a bit sour vinegar- acetobacter, cherry pit, tannins, oak, light vanilla, good sour cherry flavor and a sharp acidic finish. Pretty good.
