COMMERCIAL DESCRIPTION
A sparkling cider crafted from a unique blend of our own hand-picked late harvest apples. A slow fermentation over the winter results in a beverage of uncompromising quality and taste. It has both the sharpness (or acidity) and the astringent finish of European ciders, but originating in eastern Ontario, it has a taste all its own. Its dryness allows the apple flavours to predominate and some compare it to a dry champagne.

This cider very much reminded me of a flat Normandy cider. Its color was quite pale, presentation was disappointing in that it came in a plastic 1 liter bottle. Not over sweet, but still a little bitey relative to the aftertaste. Not a bad cider, but not their best.

1L plastic bottle, poured at CiderDays 2011. I don’t have a problem with plastic, it’s light and easily recycled, but the product inside was vapid and intolerable. The Canadian Baltika of ciders. Not much carbonation and a super fusel and sulfur bomb. Cheap. Ugh.

Bottled sample via my new neighbours. Very pale yellow in colour with a hint of green, and effervescent carbonation. Sweet apple aroma with a bit of a leafy element in the background. More sweetish apple in the mouth, along with notes of blueberry and almond. The acidity level is pretty good, and it’s very light bodied. Uncomplicated, but I’ve had much worse.

A pale yellow cider, very carbonated. A mineral sweet apple aroma, with light berry ntes. In mouth, a sourish cider, a bit chemical in character. Medium bodied. Tasted March 2007.

Bouteille en plastique claire de 1 litre achetée à la LCBO (Barrie, ONT). Arôme: Odeur de compote de pomme. Apparence: La couleur est paille pâle avec une très faible densité de bulle. Saveur: Léger goût de pomme légèrement acidulé. Courte durée de l’arrière goût. Palette: Le corps est mince avec une texture légèrement huileuse. Faible effervescence en bouche. Plastic bottle: Poured a light yellowish cider with loads of bubble reminiscent of a soft drink. Aroma of light dry apple is not really convincing. Taste is quite dry with some faint alcoholic notes also present. This cider was definitely boring and not something I will be looking for again in the future.

LCBO purchase- Pours very pale and transparent yellow. Aroma is faint granny smith apples (not sure if that is what is used here) perfumey, candy. Off dry, sweet apple flavours, with some cotton candy. Finishes quick, spritzy, with no length.The description says....."Some compare it to a dry champagne....." . I bet some compare it to a prety average cider too.

1 L plastic bottle from the cidery shared with HogTownHarry, blankboy, tupalev & jerc - courtesy of tupalev. Very pale yellow colour. Aroma is very light, with just a hint of sweet apple. Flavour is very mild as well, but what is there is pleasant and fresh tasting. A pleasant quencher, but not very unique.
