Bottle. Poured clear pale color with a minimal head that diminished slowly with little lacing. Medium floral apple and yeast aroma. Medium body with a dry smooth texture and soft carbonation. Medium apple flavor with a medium sweet finish of moderate duration. Solid drinkable cider.

Pale straw pour. Even lighter perhaps with effervescent bubbles.
Aroma is tart green apple.
Cleanness on the front of the palate, green apple, white grape, sweet nutty grain Flavour through middle. Been a long time since I've had a glass of sake, though the finish here has something vaguely reminiscent of melon, rice and alc.

Refrigerated brown bomber poured into a white wine glass. Pours hazy super pale with no head. Aroma is really light apple, medium body, medium carbonation, and really soft. Taste is light apple. Too plain.

65cl - pours like pastis served right, minus the ice cube. Nose is rice and apples. I feel like I’m getting on a roller that is just too new for my sense of security: this might completely suck... I might add the smell of bamboo shoots or water chestnuts. Retains the corporeal qualities of a cider: effervescence and a stickiness in the back of the throat. I just now realized I failed to "give a full bottoms-up tilt and swirl to disperse unfiltered apple-wine sediment evenly." IDIOT! Flat finish. More complex than a sake.

Pours a very pale cloudy gold. Crisp apple aroma with some light yeasty funk and dusty dough notes. Lightly sweet with quite a bit of tartness. Lighter-medium body, fairly active carb, with a tart and dry yeasty finish. I enjoyed this, particularly for its dryness. The rice syrup didn’t make an impression on me.

22 oz. bottle that was a gift from DrSilverworm- thanks again, Chris! Pours a very pale, very hazy straw color with a tiny head that vanishes instantly. Notes of fresh apples, rice and other dry grains. Tons of yeast in the aroma. Not unlike a Berliner in color and dryness and some of the notes I pick up on. Light-bodied, with minimal carbonation. Really unique. Fun to try.

hybrid drink are awesome. foggier and foggier white color as it pours with plenty of yeast which i make sure to add in. Aromas are common cider tartness but also a rice grain element. Ester fullness and sweetness. Finishes with a little dryness and twinge of tart int he end.

Pours a hazy very pale yellow with minimal white head. Aroma has tart and slightly funky apple. Flavor follows suit...not so funky...a bit yeasty and has notable rice notes...somewhat dry. Mouthfeel is lught and the finish is the finish is apple/winey and dry.

Light yellow with a slight haze. Pours spritzy and carbonated with a fizzy head that disappears quickly. After it settles there is very little apparent carbonation, even after a few vigorous swirls.
Apples and washed polished rice. Definitely smell the sake yeast which provides a nice essence of white rice – good sake meets good cider. Light floral esters. Sake balances the sweetness of the apples. Hint of residual acidity in the back and along the edges.
Subtle fermentation reminiscent of cask ale. Dry overall with an especially dry finish. Apples and sake dance together harmoniously. As it warms up the sake yeast takes over and dominates the apples. Sweet, dry, and a bit musky in the middle. Honeydew. A bit simplistic…maybe too simplistic.
Overall okay but definitely not my favorite Crispin cider. I enjoy cider and I enjoy sake, but at this point in my gourmand career, I think I’ll keep them separate. On the flipside though, I like that Crispin isn’t afraid to experiment with different takes on the classic cider style and so I look forward to further flavor explorations with Crispin.
