COMMERCIAL DESCRIPTION
Experience a sweetly floral to herbal aromatic bouquet and an elegant yeasty flavor with a sustained mouth-feel that develops complexity on the palate. Naturally fermented with Belgian Trappist yeasts using a premium apple juice blend, not from concentrate, with no added malt, spirit or grape alcohol. The Saint’s artisanal Cloudy Filtration style uses racked unfiltered apple wine smoothed with pure organic maple syrup, a touch of apple juice, no added sugar, colorants or sorbate or benzoate preservatives, and is filtered cold for bold, crisp refreshment.

Bomber thanks to ericandersnavy. Pours a hazy pear color with a runaway white head. Nice aroma of ripe apple - like a golden variety. Medium body with mild carbonation. Starts sweet and then goes through a series of changes ending up like golden delicious skin. So somewhat tart in the finish. Tasty drink. One of the better ciders I’ve had.

Bottle sample at Keg FOA. Poured hazy pale color with a minimal head that diminished slowly with little lacing. Medium floral apple aroma. Medium body with a smooth texture and soft carbonation. Medium maple and tart apple flavor with a medium sweet finish of short to moderate duration. Solid drinkable refreshing beverage.

Bottle (dregs)… Murky, off-white cider with a nice film left on the glass. The bouquet is of spiced apple, pear and honey. Medium-bodied and creamy with gentle carbonation. Pale golden pour. Nice head. The nose is quite interesting. Lots of bright citrus character and a little bit of light soft spiciness. A kiss of light maple and a touch of light tartness. Softly fruity with a nice light mintiness and a touch of clove as well. Soft soft fruitiness with a nice balance of apple fruit and yeast spice. Funnily enough – I always thought something like this would work, but this is the first time I’ve seen an example of it. It’s really quite nice.

Bottle. Pours with a hazy pale golden body and a fading white head (leaves a ring). Aroma of oddly phenolic yeast. Estery. Very dry with light hints of adjunct (read syrup) sweetness. A touch of plastic and fusel. A bit of raisiny and pear fruit esters on top of the [needless to say] apple character. A bit of Macintosh. Flavor is somewhat sweet. Lots maple character in the flavor that isn’t in the aroma. Somewhat nutty as well. Crisp fruit flavor. Somewhat dry finish. Pretty nice actually. Light bubbles. Very decent.

Cloudy yellow. No head. Aroma is all apple goodness. Flavor is sweet with apples and sugar. Sweet. But very good.

Bottle shared with family at the cabin, NH. Pours very cloudy (end of bottle) orange-yellow with a small, white head. Big fruity nose, hints of apple and alcohol. Big sweet flavor, faintly tangy with a bit of honey on the back of the tongue. Medium bodied with soft carbonation. Sweet finish with very moderate warmth, sugary apples, subtle yeasty dryness and musk, light notes of sweet maple syrup. Nice stuff overall.
