Pours a light cloudy yellow with little carbonation. Aromas of wood, aged cider, slight alcohol, and has a slight spicyness. It does not please the nose as much as the palate! There is a complexity of wood tones, medium sweet cider, and light honey(they use maple but flavors of honey come through). Lightly spicy, slightly herbal, lightly acidic, medium sweet, not that cloying, well rounded and smooth. Has a slight dryness in the finish. Probably the best cider iív had and one that had the most attention and time making it.

Very nice yellow color when poured. Tastes a lot like champagne and very enjoyable.

Gorgeous appearance--yellow, with the haziness of the yeast poured in. Dry front, yeasty, but thereís an underlying sweetness to the finish, too, the produce of the syrup. I wouldnít compare this exactly with great English ciders--it is still too American for that. It doesnít have the really over the top sourness or dry white wine sensibility of some of those ciders. The apple is still very fresh and forward; thatís great in a way but not everyoneís preference.

Straw pour with no real head.
Aroma is banana and clove. More hefe like than Belgian ale. Light apple.
Flavour is much more Belgian with apricot fruit and sweet candy sugar aspects. Musty apple cider . Very interesting.

This is my first cider rating, and Iíve only had French ciders from Brittany. Aroma is strong and tart, appearance is hazy golden, no foam or carbonation (poured into bowl). Pour becomes more cloudy as you near the bottom of the bottle. No evidence of high ABV. Taste is apple juice, pure and simple, with some spice and floral elements in the finish. This is really enjoyable, especially on a nice fall day.

Pours a hazy straw golden, appearing still in the glass. Nose involves tart apple and grass. Quite sweet flavor, but also pretty tart. Lighter bodied, waxy, puckering, softly active. Upon warming, the influence of the Belgian yeast and maple syrup begin to appear, though still fairly minimally. Upon swirling and dispatching some of the sediment, the appearance turns to a milky looking egg yolk, so that is not recommended at all. All in all, a decent cider on its own, but I found the influence of the specialty ingredients to be minimal.

Bottle poured into a shaker. Pours a lightly cloudy gold with no head. Aroma of green and red apples with a little spice. Taste is sweet. Starts with apples but the maple hits me right away. Just a slight hint of spicy belgian yeast in the after taste. Light bodied with a thin texture. Soft carbonation but a decently long finish. Pretty good. A very interesting take on the cider. A whole bomber may be a bit much though. May want to plan on sharing this one.

Bottle. An unclear, yellow cider with some white bubbles. The aroma is almost puke-like, but the sweetish apples dominates. Some cinnamon hints. The flavor is pretty much the same, although less spiced. Medium body, silky on the palate. Lasting sweet apple finish. Overall, Iím not impressed in any way. The only thing I really like about it is the mouthfeel. 130804

12/10/2010 and 12/12/2010: Crispin "The Saint" Natural Hard APple Cider Artisanal Reserve Belgian Trappist Yeasts and Organic Maple Syrup... Aroma: Yeasty and fruity scrumpy apple with a sweet edge of maple syrup. Appearance: Cloudy, pale golden straw color that reminds me of pear juice. Flavor: Sweet, freshly pressed apples (gala, golden delicious, honey crisp) with some soft, creamy yeastiness that softens the crispness; pear and a slight real maple syrup sweetness through the finish with a crisp, flral and slightly spicy finish. Palate: Medium-light; still; soft and sweet on the lips. Overall: Nice, enjoyable cider that is layered with flavor and isnít boring like most typical ciders.
