Blended using 4 unique apple wines aged in both Rye and Bourbon American whiskey barrels. Apple wine fermented with irish stout yeast, belgian trappist yeast, sake yeast, and our original Colfax Classic. Final product is finished with tupelo honey aged in Bourbon barrels and a lingering open-mouthed kiss of fresh-pressed apple juice.

fairly ugly floaty-rich pour within an ounce or two; the color appeared to be a medium gold before it was clouded. bourbon, some faint fairly one-note apple behind. hints of floral; can’t discern the tupelo varietal but it could definitely be honey. flavor is sweeter up front than it seems in the aroma, before barrel and bourbon take over. Acidity is quite low, and tannin even lower, especially for such a heavily barrelled cider. some floaties in my mouth are clearly felt, and there’s a film when I swallow like it was partially raw apple juice. I kinda like it, but there’s not much of a cider left here. Or it’s just hidden behind the bourbon.

Tasted on 3/21/14 from a capped 12oz bottle purchased at Craft Brewed. Pours a clear bronze with a thin white head that quickly disappears, and the last quarter of the bottle becoming quite cloudy. The nose is a very interesting blend of fresh apple juice, honey, bourbon vanilla, coconut, and toffee, some cheesy yeast, and just a hint of spicy vegetal rye. The flavor is the same honeyed apple with coconut and caramel whiskey, a touch of spice, and plenty of cheesy yeast. The body is medium with some fizzy carbonation and a long apple and whiskey finish.

Not a pretty beverage, like dirty dishwater, lots of sediment. Aroma is sweet, apples, soft bourbon, hint of vanilla. Higher end of light body. Sweet but not unexpectedly. Interesting flavor, bourbon intermingling with apple cider. Tartness has been cut has smoothed out the cider component. Touch of rye spiciness. Finish is rather clean, sweet and appley. Not much happening on the palate. Unique. I like it. If I would have a cider, this would be one to have. .

Sour, tart apples and whiskey aroma.sweeter aroma of Apple pie as it warms. some honey, flour. Taste is light and smooth. Apple cider, light spices, some alcohol nicely hidden, honey. A slightly tart, apple finish. Very nice.

Pours hazy gold into a snifter. Apple, oak and honey aromas. Dry with sweet/sour apple upfront turning to oak and vanilla before returning to apple cobbler in the medium length hot finish.

(bottle - 12 oz) Clear gold with a soapy white head. Fresh apple aroma with a light undertone of honey and some light bourbon vanilla sweetness. Flavor is sweet vanilla apple with a mild wood hint at the finish. Not overly sweet and that fresh apple flavor really comes through at the end.

UPDATED: OCT 7, 2013 Pours a clear golden color, but with tons of sediment on the bottom of the bottle, with what is really a big aroma for a cider, due to the strong presence of boozy barrel notes, and an almost candy-like sweet apple aroma. Actually a little strange for a cider. Carbonation is moderate. Taste is moderately intense and sweet, little tartness in the background. Has somewhat odd musty background taste and aroma back through the nose in the middle. Finishes a little weak, with some of the tart apple coming back. Not as good as I was expecting, and a bit pricey for what you get, but it is a pretty tasty cider. I’ll likely come back to this again.

I don’t like ciders generally. This is in a class by itself. Intriguing, notes of whiskey, peach, vanilla and Sake, though nearly flat from the bottle is tart and refreshing. It is the first cider I have willingly bought, and knowingly sought out. Special and worth seeking.

12oz twist off bottle. Murky hazed dark golden with minimal signs of carbonation. Sweet apple and bourbony notes fill the air upon pour. Quite sweet on the nose, apple, caramel, vanilla, hints of rye spice, light belgian yeast esters very low, but really just smells like a caramel apple. Sweet pressed apple up front, spicey rye and big sweet vanilla bourbon notes in middle finishes with apple and some faint yeast dryness. This is a sweet one, but tasty and nice that both barrels add to the end taste. Glad it is only a 12oz bottle though.

Bottle shared thanks to stevencon! Pours a hazy yellow with no real head or lacing. Aroma is like apple cider without the booze, like the one you but on a grocery store during winter. Taste of apple cinnamon candy and a hint of wood. One of the best ciders I think I’ve ever had.
