COMMERCIAL DESCRIPTION
Blended using 4 unique apple wines aged in both Rye and Bourbon American whiskey barrels. Apple wine fermented with irish stout yeast, belgian trappist yeast, sake yeast, and our original Colfax Classic. Final product is finished with tupelo honey aged in Bourbon barrels and a lingering open-mouthed kiss of fresh-pressed apple juice.

12oz bottle poured into glass. This has to be one of the best ciders Iíve ever tasted, or somewhere in my top 5. Thereís definitely a little bit of lingering whiskey barrel flavor alive in this bad boy, along with apple and spice flavor. A real treat!

Really cloudy pour with a lot of floaters :) aroma is apple and bourbon and is a tart. Nice taste with the sweet apple balancing well with the bourbon, and it finishes very smooth. Also notes of vanilla and oak in there. Nice change of pace cider.

bottle, muddy orange color with no head, aroma and flavor similar to a hot toddy, whiskey, rum, butterscotch, lemons, similar finish

Bottle from Samís Quik Stop. Pours a turgid brown with no head. Nose is of bourbon and apples which donít mix very well. Tastes of maple syrup and apples which is another combination that doesnít work. Cloying in its linger. Not feeling this one at all.

Bottle from Samís quik shop - pours dirty cloudy yellow-orange with bits of yeast(?) floating in it. Aroma is the best thing about this one with notes of bourbon, green apples, pineapple, and alcohol. I donít get any of the rye, it doesnít seem to be adding anything. The taste is lightly sweet, but mostly lacking of anything until it warms a bit. Palate is very watery with a touch of alcohol in the finish. Overall, I was disappointed by this one. Iím not getting the point of blending 4 ciders if the result is thin apple water, that granted, smells fantastic.

Bottle. Hazy dull golden pour with very little head. Nose of oak, crisp apples, whiskey - honey sweetness, apples, and a woody bourbon finish. Unique.

Cloudy yellow color. Aroma of whisky, honey and light vanilla. Tart apple flavor with some vanilla. Lightly sweet.

Bottle from The Davis Beer Shoppe. Pours hazy gold with a few bubbles. Aroma is fairly bourbon. Maybe also rye. Definitely also apple. Flavor is rather cider sweet - I think itís more rye than bourbon/van - Mildly woody. Think the honey comes through on the lips. Interesting stuff. Not getting banana ester, so donít know where the trappist yeast went.

Apple cider and bourbon barrel aroma- very nice. Cloudy light honey color. Tastes sweet and tart with a dry, tannic finish. Barrel is a very prominent flavor amidst Granny Smith and sweet apple flavors that finish with a warm spice note.
