Blended using 4 unique apple wines aged in both Rye and Bourbon American whiskey barrels. Apple wine fermented with irish stout yeast, belgian trappist yeast, sake yeast, and our original Colfax Classic. Final product is finished with tupelo honey aged in Bourbon barrels and a lingering open-mouthed kiss of fresh-pressed apple juice.

I grabbed a bottle of this about a month ago, and it wasnít even in the database yet, thanks to whoever put this in for sparing me the trouble.

Pours a very hazy yellow with a champagne rise and fall head.

Iím beyond taken with the aroma of this cider, it smells a great bit like cognac woody and rich, aromatic and complex a little spicy.... but somehow rustic. But itís fruitier, not in an appley way though itís more citrusy than appley... This reminds me of the aroma of a well made sidecar and I love it.

The flavor is less amazing to me, this is not to say itís bad though... itís a touch sweet but very spicy and woody... beyond that Iím not catching a ton of Whiskey character here... it is boozy and has a bit of a tinge of brandy. Some of the sweeter ciders that Crispin has blended into this seem to be weighing it down a little bit more sweetness than I would prefer but then there is some of the barrely funkiness that is so great about Polish mead that is quite certainly present here... so thatís pretty cool and matches the sweetness well.

I like this one.... Maybe not as much as Stagger Lee but I do like it and Iíd probably buy it again. Not bad for Tenth and Blake cider... and really very good for Crispin.

Aroma - Whiskey, apples, oak
Taste - Sweet apple, tart, alcohol

I was hoping for more of a punch here, but it was just an average cider overall. Aromas initially revealed a nice whiskey aroma, but the taste was just apples and wood - pretty good though!!!

Bottle. Looks and smells like not hard apple cider- with a bit of a buttery note on the nose. The whiskey really comes through in the flavor- tasting like whiskey + apple cider. Round full mouth feel, low carbonation, sweet finish. Tastes like fall.

From the bottle came a cloudy yellow cider with very little head. Aromas of whisky and apples. Light bodied with flavors of apples and lightly oaked and a hint of bourbon.

Ar: Fresh apple cider - tart apple skin and tannins. Ap: Cloudy pale golden - fizzy white head with the slightest bit of foam. T: Tart apple up front, semi-sweet - fresh cider tannins - a bit of oak - finish is fresh apples and some clean alcohol. P: Light body, high carbonation, very lively - bone dry finish. O: A pleasant hard cider, not a lot of complexity - the barrel aging character is very subtle, but nice.

Pours a murky, yellow color with a few white bubbles. There was a ton of yeast in the bottom of the bottle, much of which came into the glass even with a careful pour. The aroma has a good bit of apples and vanilla, as well as some oak and a hint of bourbon. The flavor is similar. The bourbon, oak and maple come through up front, with the apple notes adding a nice crispness at the end. Very nice.

12 oz bottle. Audible carbonation. Sweet aroma. Cloudy. Sweet apple flavor. The barrel tastes are quite subtle. I get more rye than bourbon.

Bottle. Pours hazy, honey-tinged apple juice. Initial whiff when you pop the cap is a big bourbony nose. It lightens up once poured into a glass and the honey really opens up. Taste is fresh, crisp, not overly tart apple first. Then thereís a nice bit of bourbon bite and some smooth, sweet honey on the finish. Really coats the tongue and last while. Makes for a nice, crisp sipper.

12 ounce bottle from Beer Run. Pours a hazy orange color with a bit of thin fizz. Aroma of sweet apples, earth, honey, vanilla, bourbon. The taste is sweet apples, vanilla, wood, spice, pineapple, citrus, honey, whisky. Medium bodied. Quite interesting.
