375ml bottle. August 2015 bottle date. Appearance: Light golden, mostly clear, with a light white foam cap.
Aroma: Brett earthy funk dominates with moderately strong lemongrass and a bit of herbal sage.
Taste: Strong acidic tartness, with and underlying earthy brett funkiness and a fresh lemon zest. Moderate bitterness with a touch of sage that shows up in the swallow.
Mouthfeel: Light to moderate body with high carbonation.
Finish: Dry and earthy funk that lingers. Acidic and lemon character leaves a puckering tartness.
Overall: Awesome beer. Earthy funkiness and acidic lemon dominates the overall profile of the beer. I detect very little sage character, more apparent on the swallow

Draught at Ølsnedkeren Århus. Citric, sweet, and spicy aroma. Cloudy golden color. Good creamy stable white head. The flavour starts off quite acidic, then comes a district sage note. Teaish note as well. Citric finish.

Shared bottle at RB Crete tasting at Nikos place, Chania. Pours clear weak golden with a small creamy white head. Brett aroma, rhubarb and some oak. Weak tarty taste, watered out limonade with brett notes and wood. Long weak tarty finish

May 2015 bottle. Pours lemony lighter golden with a fluffy white head. Aroma brings a pleasant lemon profile from the lemongrass. Flavors of lemony saison yeast and the sage has calmed down for sure. No bite at all, and the tart is almost there, but not quite, almost making you want some but enjoying the saison style for what it is. Smooth blander body as well after carbonation settled for a few minutes.

Bottle. Herby aroma. Taste is good, citrus and sage finish. Not so sure but it’s nice enough.

Bottle. Milky straw yellow body, large foamy white head. Nose is herbs, white sage, brett, lemongrass and hints of straw, hay, pale malts and earthy leaves. Weird. Taste is citrus, white sage, herbs and hints of lemon juice and yoghurt. Medium to light body, medium to high carbonation. Not bad, but the sage thing isn’t really where its at for me.

On tap at the Source. Cloudy light gold with s huge nose of fresh sage. Light bodied and dry the flavor is sage and wild herbs with white. Very dry and easy to drink though the sage is a bit too full on for my taste.

Bottle. Pours clear yellow, with a big creamy head. Aroma is wooden yeast and bretty notes, as well as white berries, grapes and some grassy notes. Medium body, with average to fizzy carbonation. Flavour is tart with white berries, citrus peel, musty fruits, and bretty notes of stone fruits and wood, as well as some floral and grassy notes. Tart fruity finish.

Bottle. Sage aroma (quite strong), something like scorched tomato sauce. Dark amber/straw color. Flavors of lemon, sage, with a sugary mid-palate fruit hit, then some sour citrus, and a lightly sweet fruit finish. Thin body. Brett is not so strongly present in this one. Interesting, though the sage is a bit much. One guy said it reminded him of his Italian grandma’s spaghetti sauce.

Bottle. Huge sage nose. Also lemon, honey, biscuits, and something that reminds me of burnt tomato sauce. Clear, oily golden color. Flavor is a bit less dominated by sage, lemony, funky. Soft, oily palate that works. I don’t really care for the sage, but the beer is nice.
