Bottle. Pours clear yellow, with a big creamy head. Aroma is wooden yeast and bretty notes, as well as white berries, grapes and some grassy notes. Medium body, with average to fizzy carbonation. Flavour is tart with white berries, citrus peel, musty fruits, and bretty notes of stone fruits and wood, as well as some floral and grassy notes. Tart fruity finish.

Bottle. Sage aroma (quite strong), something like scorched tomato sauce. Dark amber/straw color. Flavors of lemon, sage, with a sugary mid-palate fruit hit, then some sour citrus, and a lightly sweet fruit finish. Thin body. Brett is not so strongly present in this one. Interesting, though the sage is a bit much. One guy said it reminded him of his Italian grandma’s spaghetti sauce.

Bottle. Huge sage nose. Also lemon, honey, biscuits, and something that reminds me of burnt tomato sauce. Clear, oily golden color. Flavor is a bit less dominated by sage, lemony, funky. Soft, oily palate that works. I don’t really care for the sage, but the beer is nice.

Bottle (375 ml). Split 2-ways. Clear pale bright golden with a small white head, good retention, good lacing. Aroma is super herbal, but also nicely balanced by citrus, mild oak spiciness, lemon and pot-pourri. Taste is gently tart, perfect level of acidity, nice herbalness, lemony notes and mild bitterness. Light to medium body. Moderate to medium carbonation. Strong herbal finish. I can understand why this isn’t for everyone but I love the acidity vs herbal presence. Well balanced. Lovely.

Bottle shared. Clear gold pour with thin white head. Aroma is very herbal, sage, lemon, somehow this just reminds me of chicken, meaty, herbal, spicy, vegetal, bean mix. Taste is much better, very herbal, rosemary, sage, lemony, much better than the aroma, well balanced tartness, very easy drinking. Palate is light bodied, dry, perfect carb. Aroma is a bit funky but definitely a nice beer.

375 ml. bottled August 2015. Active golden body has jetsam that supports a nice disc of meringue foam on top. Nose is white grapes, citrus, honey, light oak and a pleasant earthy-spiciness that seems more brett than sage. Flavors of mildly tart white grape, bitterish grassy herb, and touches of citrus and mineral water. Long finish shows some notes of sage and mint toothpick. Light-medium body is astringent and dry with low-medium fizz. Not real sour, but a pretty refreshing Saison.

Idiosynkrasie (5875) - Bielefeld, GERMANY - APR 5, 2016
375ml bottle. Cloudy, yellow-ish golden colour with average, thick, frothy, fairly lasting, moderately lacing, white head. Herbal-spicy aroma, notes of sage, mild bretty funkiness, a minimally soapy bath salt touch. Taste is initially dry, moderately sour, tangy, citric sourness, hints of brine and gherkin; a herbal braking effect keeps the sourness slightly at bay; some residual sweetness comes in and takes away some more of the sourness; nevertheless both, the spici- and sourness are strong enough to leave some effect in gullet and stomach. Slightly monotonous overall.

Never have had a beer with sage in it before. Wasnt really even sure what sage tasted like. Definitly a wild hearbally feel to it.
