It pours with a mahogany colored body that supports a tan head. The aroma offers sweetened berries, sherry notes and plums as well as some tartness leading into sour. The taste is similar with tartness and mild acidic sour citrus as well as muted malt sweetened berries and raspberries. This is a little dry and Iím loving the balance between the sweeter barrel notes and base beer with the tartness and sour.

February 2nd, 2013 - The Crooked Stave tasting train is rolling along, but even one sampler on an empty stomach is enough to have me reeling just a little bit. The Nightmare on Brett in bourbon barrels was a curious hybrid between two very different drinks which I enjoy for two very different reasons. But cognac is a more unfamiliar creature to me, so Iím tasting this beer without the skills to divorce what might be the effect of the wood, and what might be effect of the brew. On the nose I detect a sweet smelling perfume of chocolate, chocolate covered coffee beans, coconut butter and a fistful of vanilla beans. The flavor is much closer to what Iíd expect cognac to taste like, with those chocolate notes appearing again in the taste, given some sharpness and acidity by aging in the cognac barrels. Itís a little tricky for me to describe, but the added layers of flavor remind me of cranberry and tart cherry. This is excellent too, strong and bold, and a demonstration that cognac is another acceptable residence for beer in the long term.

Tasted on 9/8/14 from a black waxed and capped 375mL bottle from the original 2012 Cellar Reserve, huge thanks to Aaron Nielsen for muling for me. Pours opaque dark brown with a thick tan head that slowly recedes to thick, uneven lace, leaving messy lace residue along the inside of the glass. The nose is really focused on dark bread, toasted cocoa nib, caramel, molasses, and dark chocolate malt, with plenty of earthy funk, hints of vanilla and cinnamon oak, and just a tinge of citrus expression letting me know that this will be sour. The flavor is much more sour up front and throughout, with very dry brett funk, molasses, some bitterness from the toasted cocoa nib/dark chocolate, and a nice touch of vanilla and cinnamon oak. The body is full with a nice, lightly tannic structure, just under average, very smooth carbonation, and a long tart lemon peel, touch of baking spice, and lightly bitter dark chocolate finish. This beer is very nice and super complex.

small bottle, very sweet here, the tart doesnt ballance the sweetness of the base beer and the barrel treatment. Cognac is a tough one to do, Some complexity but definitely one of the weaker of the series

Bottle 375ml.

Clear dark black brown colour with a average, frothy, good lacing, mostly lasting to diminishing, light beige head. Aroma is moderate malty, roasted, tart, raisin, plum, prune, wood, oak, berry, light chocolate, light soured milk. Flavour is moderate to heavy sweet and moderate acidic with a long duration, wood, brett, berry, alcohol, plums and prunes in alcohol. Body is medium, texture is oily, carbonation is soft - fizzy, finish feel is light alcoholic. [20131024]

A - pours cola brown with no head and no lacing. S - wet oak, red wine vinegar, cherries and tart red berries, cognac and brown sugar. M - tart and dry. Medium body with low carb. Some heat in the end. T - red wine vinegar, musty oak, tart red berries, cognac and earth. O - a nice rendition of nightmare. Not as good as the cru. 3.8

Bottle shared at Seanís Tasting (Ann Arbor, MI). Pours a deeper blackish brown pour, a brownish glow on the body and edges, darker middle. Frothy tannish head atop dies to a decent ring, laces ok. Aromas are dark fruit, raisin, some cognac and oak. Wet oak, vanilla, decent sourness and lactic life. A bit of toast, toffee, and biscuit. Nice, richer dark fruit elements. Initial is a good dose of spirit, firm sourness, a bit acedic. Some dark fruit, raisins, red and dried grape/raisins. Wet oak, a bit sticky and carmelized. Some vanilla, toastiness. Middle is caramel, wet oak and vanilla, a touch more girthy, the sourness hits a peak and starts to taper from there. A bit more lactic, sour and lemony, yogurty and red fruit, tannic as we hit a gentle smokey earthy feel. Finish is a bit tart, oaky and trailing out. Pretty solid, more dark fruit influence. Some richer oak, not as sour as Bourbon was and lactic driven. Nice.

Bottle. Pours a black color with a small off-white head. Has a fruity roasted malty bretty sour cognac aroma. Fruity malty tart sour woody caramel flavor. Has a roasted malty woody sour tart finish.

Bottle from dcschiller. Pours deep brown with light red highlights, and a thin tan head that quickly fades to a thin ring. Aroma has a huge brett character, with vinuous red wine notes. Flavor was much the same with full, slick mouthfeel. I never would have guessed it was cognac barrel aged with such a large red wine character. I liked this a lot.
