Deviating from conventional brewing methods and inspired by historic brewing techniques, we created our Pure Guava Petite Sour. Blending farmhouse brewing traditions with an old world souring technique this rustic wheat beer is brewed with the addition of oats and spiced with coriander and sumac. Fermented entirely in our distinct oak foeder, Pure Guava is an unfiltered, golden wild ale with tropical fruit aromas and bright citrus flavors created by a proprietary Brettanomyces strain. This beer is bottled with the natural yeast, if cellared in a cool dark place it will develop more complex Brett characteristics and evolve for years to come. Drink as you would a wheat beer, cloudy with the yeast in suspension. Please enjoy this unique offering in your favorite stemmed glassware and allow the beer to breathe and open up as you swirl it in your glass.

Hazy yellow beer with smallish head on top. Aroma has sweet tropical fruits, sourness, tart. Lemon zest, sourness, grapefruit and sweet tropical fruits. The first sip was like biting a guava, but sadly the moment was gone and couldn’t pick it again. Soft mouth feel with medium carbonation. Again really nice sour.

Bottle from Boxbeers. Hazy, pale orange with off white head. Tart aroma with some tropical fruit, yeast, funk, citrus, grapes, a bit of pear. SImilarly tart flavor with funk, yeast, citrus, oak and guava. Pretty dry with a crisp, light finish.

Bottle. Pours hazy light pale orange with a medium white head. Aromas of stone fruits, grapes, citrus, esters, light lactic, oaky. Taste is lactic, estery, grapey, floral, citrus, tropical fruits, guava, sulfur.

On bottle thanks to Klimaet. Pours a hazy golden with a small, white head. Aroma has brett, dry saison yeast, wheat, slight esters, white grapes, citrus, pear, guava i guess, white strawberries, pomelo, slight leathery. Taste is pretty sour, guava juicy, super dry, oaky, leathery, crisp bitter finish. High carbonation and a crisp body.

On tap at What’s Brewing 2015, day 2. Hazy orange body with a tiny white head. Aroma of pineapple, guava, wheat. Sour taste, funky, mild bitterness. Notes of straw, lime, guava, tart mild spicy finish. Refreshing dry aftertaste with fruits, lasting tartness. Nice.

Bottled August 2015. light yellow hazy color, small white head. smells sour, wood, horse blanket, some marzipan, nuts, spices, very nice smell. light body, soft carbonation, slick mouthfeel. tastes rather citric, sour, horseblanket, light wood, herbal, spices. finishes rather sour and citric with some herbal notes. drinks very good, very refreshing.

Tasted on 5/20/16 from a capped 375mL bottle purchased at Craft Brewed. Pours crystal-clear golden orange with a thick, rocky white head that slowly recedes to average lace, leaving some residue along the inside of the glass. The nose has some savory spice, soft lemon, light, nuanced tropical fruit, along with a bit of basement and spicy yeast aroma, and just the lightest hint of vanilla. The flavor is nicely tart and sour, plenty of lemon, with all of the tropical fruit and savory spice barely coming through, and the funky yeast adding another element. The body is light with just above average, fizzy carbonation, and a medium tart, lightly spiced and funky finish.

375ml bottle pours hazy orange with a finger of head. Nose and palate have nice juicy tropical melon and lime, dusty oak, toasted grain, hay, funk, medium high acidity, sourdough, citrus, kiwi. Tasty!

bottle at home. pours hazy light to hay yellow. n head. Citric acid and lemon juice aroma with a some warm spiciness to it. Light sourish body, nothing exciting actually. Flavour is faint citrus juice mixed with some wheat wort.
