Deviating from conventional brewing methods and inspired by historic brewing techniques, we created our Pure Guava Petite Sour. Blending farmhouse brewing traditions with an old world souring technique this rustic wheat beer is brewed with the addition of oats and spiced with coriander and sumac. Fermented entirely in our distinct oak foeder, Pure Guava is an unfiltered, golden wild ale with tropical fruit aromas and bright citrus flavors created by a proprietary Brettanomyces strain. This beer is bottled with the natural yeast, if cellared in a cool dark place it will develop more complex Brett characteristics and evolve for years to come. Drink as you would a wheat beer, cloudy with the yeast in suspension. Please enjoy this unique offering in your favorite stemmed glassware and allow the beer to breathe and open up as you swirl it in your glass.

"odd brew. i loved guava grove from cigar city, but this is NOT that beer’s equal. the strength is the guava in the flavor. very nice. but overall this beer had too many issues to overlook. 1st off, it was a gusher. what beav described as vomit notes in the aroma i’ll call guava diaper. not a very pleasing (though not alltogether offensive) aroma for a sour lover. feel is a little too prickly due to the overcarbonation, but not too bad. flavor is nice. subtle sour and tart lemon, sweet fruit. still kinda weird, but if it smelled like it tastes, i’d have liked it. as it is, can’t get past the smell. it was "interesting" enough to make me curious about their other brews, though."

[ Bottle #1672/1765 ]. [ Courtesy of my Secret Winter Santa ]. Unclear medium orange yellow colour with a average, frothy, good lacing, mostly diminishing, off-white to white head. Aroma is moderate to heavy cheese, tart, wood, smelly feet, blue cheese. Flavour is moderate to heavy sweet and light light acidic with a average to long duration, fruity, tart, grape, citrus tart, cheesy notes. Quit oud aroma but did like the flavor ;D. Body is medium, texture is watery, carbonation looked soft to flat but in your mouth it was lively - fizzy. [20130828]

Sampled at the Funky 8 - Barcade, Brookly, NYC. Pours cloudy, amber gold with a moderate, off-white head. A bit funky, a bit cheesy. Definitely some sort of guava character in there. Fairly tangy and acidic. Not bad.

Bottle from Jason Bach, from 1.5 years ago. It seems people had some bad luck storing this beer, or receiving bottles not properly sealed. I had none of that. While we got some initial nail polish aroma,, I found the yeast aroma to be fine. A nice sour, great carbonation with honeydew, cucumber, lime, fruity kiwi. A very tasty sour finish. Enormous bubbly creamy head.

Picked up a bottle of this for the hell of it since it was a brett beer brewed in CO. Super cloudy orange color, it gushed at first and had a head but then it was gone. I smelled the rumored vomit for a brief couple seconds even though I let it warm up but then it was gone giving way to a funky brett smell. The flavor really does have a bit of sweet tropical fruit mixed into a wheaty and funky melange. There is a hint of sour but it is super mild. It tastes good and the flavor really outdoes the aroma by far. Overall this is pretty good and I look forward to the Wild Wild Brett Rouge and upcoming Crooked Stave brett beers. bottle no thanks to Adam for sharing. jk. Pours hazy orange white head, nose bile, musty yeast, lemon, mothballs, fl bile flabby tart guave, lemon, musty, just off, the initial fruit burst is just terrible it mellows and is watery.

Bottle that I took to a tasting at Paul’s. Pours a hazed amber with a medium sized off white head. Musky, and super cheesy. Smells like a mediocre Parmesan with a touch of guava jelly smeared over it. Medium bodied, nice bright acidity and some jammy guava notes. Tastes far exceeds the nose, sweet and acidic, delicous. Really nice stuff. Highly drinkable once you get past the overly cheesy nose. Lingering acidity and bright jamminess.

Bottle shared by Jay at Paul’s. Pours cloudy yellow gold with white head. Nose/taste of exotic fruits, lemon and wild yeast. A bit of dry diaper in the nose but not on the taste. Medium body. Good carbonation.
