COMMERCIAL DESCRIPTION
Deviating from conventional brewing methods and inspired by historic brewing techniques, we created our Pure Guava Petite Sour. Blending farmhouse brewing traditions with an old world souring technique this rustic wheat beer is brewed with the addition of oats and spiced with coriander and sumac. Fermented entirely in our distinct oak foeder, Pure Guava is an unfiltered, golden wild ale with tropical fruit aromas and bright citrus flavors created by a proprietary Brettanomyces strain. This beer is bottled with the natural yeast, if cellared in a cool dark place it will develop more complex Brett characteristics and evolve for years to come. Drink as you would a wheat beer, cloudy with the yeast in suspension. Please enjoy this unique offering in your favorite stemmed glassware and allow the beer to breathe and open up as you swirl it in your glass.

Pour from a bottle thanks to my buddy Robert for sharing. Golden in color. Aroma right out of the bottle is rather abrasive and off putting. Kinda rank. But after letting it breathe the fruit stands up. Light in body with some good carbonation. Funky brett barnyard earthy flavor along with a balanced tartness. The guava flavor is natural , unique and quite good. A good beer and worth sampling for sure.

Pours a hazy orange color, highly carbonated(this was a gusher out of the bottle) crazy head that disapates completely within a minute. Aroma of funk, tropical and citrus fruits, I do smell guava, crazy after reading that there is no fruit in this beer at all just the fruitiness of the yeast. Taste follows the nose, a bit spicy but not black pepper spice, more acidic and citrusy. Mouthfeel is highly carbonated, I feel a little less carbonation may showcase this beer a little better but overall this beer rocks, I’m glad I got to try it!!!

750ml bottle from adnielsen. Murky faded orange with a billowy off white head that completely disappears. Light tropical fruit (guess its guava but not sure), tart, pear, chardonnay, and a bit of grass. High carbonation, mild body, tart and light, becomes a little dry, nice.

The beer pours a cloudy orange color with a tall white head. Super cheesy on the nose. Smells quite a bit like the powdered parmesan cheese. A bit of guava and tartness, but it’s hard to get past the cheese. The flavor isn’t quite as cheesy, but it’s still there. A bit more guava, malt, wood, and tartness, but not enough to save this beer.

I’ve been terrified for months, staring at the "vomit beer" in my cellar. Finally I succumbed to a sour jones and was deeply relieved to discover that I apparently was sent (by my good bud) one of the normal bottles. Lovely medium orange pour with a vigorous carbonation, little lacing. Nose is aggressive and acetic but familiarly puckering rather than bilious. Some soft spice and some fruit too. As the head settles down you can detect some of the puke notes, I guess. But it’s so mild as to be easily overlooked (oversmelled?). Very nice, refreshing sour wheat is what you get, with some grit and spice, and a huge dollop of dry funk and yeast in each sip.

Where the Wild Beers Are, 2011. Strange aroma of stomach acid and cheese. No fruit really, and it is a little sour. As terrible as this description sounds, it actually is drinkable in a wild beer kind of way. Cloudy orange.

bottle. Cloudy golden orange color. Crazy strange pungent blue cheese aroma. with tropical fruit notes. Sweet & tart fruity flavor, sweettart candy sweet & tart flavor. Lots of tropical fruits. I apparently liked this more than most

Pours a bright orangey gold with a lot of head. Some gushing upon opening. Nose starts out pretty nice with yogurt and strong tart notes and a big tropical guava essence. Tasting, it is softly acidic and okay at first. Nice brett undertones and a light sweetness to accompany the tartness, but then it starts to go wrong. Warming starts to turn it towards vomit. Rotten fruit starts to come up and it becomes hard to finish. It’s fine cold, but any heat and it just gets weird. Worth trying once.

Pours a nice glowing amber golden hue, some healthy darker orange glow with a small loose bubbly white head, dies down to a ring, minimal lacing. Aromas are quite sour. Acidic and lactic acid, lemons, yogurt, and stomach acid. Touches of guava on the nose, with a lot of sourness. Initial is light bodied, lightly flavored essence. Gentle acidity and lactic qualities, touches of guava, light funkiness. Dry bread and flaked wheat, some straw, and fruity qualities. Mellow guava, a good deal of lactic acid, yogurt and lemons mix, dry and touches of sweet tarts. Dry sourness, a bit bland, lacking body. Kinda just one element, not as sour as the nose let’s on. Weird beer. Funky and stomach acid, with guava, lemons, lactic acid. Meh. Hopefully, future fruits are a bit better. The nose is quite potent sourness, but beer itself becomes a bit bland.

750ml bottle. Courtesy of Adam for sharing... Pours a hazy dark orange brown hue, mostly opaque, and topped with a thin to medium soapy white head that quickly retreats towards the edges... Aroma isn’t all that impressive with bile and vomit like accents which unfortunately I’ve been subjected to of late. Sour and aidic with very tart guava fruit accents... Flavors of prickly pear, mild to medium sourness, with a touch of that bile and rotten fruit overtone. A bit of grain on the backend. Soft to medium bodied. Pretty darn terrible to be honest.

750ml bottle, 5/11 bottling, #1586/1765. Pours a golden amber color with a white head. A little bit of a gusher. Aroma is light, a little sour, maybe some guava. Light on the palate with soft carbonation. Flavor is sour, acetic, maybe just a touch of fruit, but not much. A pretty plain sour.
