Vieille meaning “Old” is our artisinal barrel-aged Saison, lightly dry hopped. Each batch release is a diverse blend of Vieille casks that have taken on a soft Brettanomyces character before being lightly dry hopped. Dominated by a floral, citrusy hop character, a subtle herbal note and a tart finish, Vieille’s character exemplifies artisan Saisons.

35cl botle.Pours a clear pale golden, with a white head and visible carbonation - much like a sparkling wine. Smells of brett and citrus. Dry taste, with notes of brett, mould, lemon zest and grapefruit.

From bottle, Thanks to Vindueskigger! Pours hazy golden with a white head. Aroma of funk, brett, citrus, barnyard, pineapple. Taste is light sour, funk and citrus, light tropical, juice.

Bottle. Nose is very, very funky, floral, lemons, herbal, sherbert, clove. Very, very appetising.Taste is cereal, a little biscuit, funky, sharply tart, with lemons, lime, pineapple, leathery brett, green apple, a dry herbal note, with a spicy character, in the lightly hopped finish. The barrel, is there as the beer warms, complimenting the leather from the brett. A very nice, complex beer.

The barrel aging really mellows out a lot of the flavors but also adds some very interesting elements to the taste. The barrel flavor goes well with the funk and tartness as the citrus comes through as well. The smell plays into the taste almost exactly. The feel is smooth just before you get a tingling on your tongue from the carbonation. This is an excellent saison!

Yellow hazy, white head. Smell of funk, hints of tart berries, light malts, oak, spices. Light sweet, tart fruits, light to moderate sour, oak, quite funky, spicy, fruity, extremely complex. Light and refreshing at the same time. Great stuff

Bottled 2014/Batch 14. light yellow hazy color, small white head. smells of funk, citric, horse blankett, pickles, light nuts, light sewerish. nice smell overall. light body, medium carbonation, slick mouthfeel. tastes citric, sourish, some funk, straw, green apples, very lightly nutty. finishes very dry with citric and sourish notes. Quite good stuff, very light bubbly body, very dry, not overly complex, but enjoyable none the less.

12 oz bottle from Winooski Beverage, served at cellar temperature in a tulip glass. Slight gusher.

App.: Hazy light golden with a frail white head. Aroma: Zingy, pungent citrus, green bitter herbs, light to moderate funk, grainy malt, a little tropical fruit, somewhat peppery, maybe a little character from the oak. Palate: Medium body, relaxed and fine carbonation. Flav.: Quite tart, lots and lots of lemon, lighter bitter green herbs and funk, minerals; dry with low bitterness, fairly high acidity and a quite lemony finish.

Not really what I’d expected and not quite what I wanted.

375ml bottle. 2014 Batch 14. Golden colour, white foam head and aroma of citrus rind, fruity apricot, funk. Taste is sour, orange citric rind, grain, fruity, herby, tangy, woody oak, barnyard with some hay & biscuit and light bitterness. Light to medium bodied, low to medium carbonation, dry sour funky finish. Nicely drinkable.
