COMMERCIAL DESCRIPTION
Vieille meaning “Old” is our artisinal barrel-aged Saison, lightly dry hopped. Each batch release is a diverse blend of Vieille casks that have taken on a soft Brettanomyces character before being lightly dry hopped. Dominated by a floral, citrusy hop character, a subtle herbal note and a tart finish, Vieille’s character exemplifies artisan Saisons.

12.7 oz bottle, batch 8. Misty golden brown with a lacy white head. Nose is yeast, vanilla, grass and light lemon zest. Creamy with a dull sparkle. Taste is lemon juice, bay leaf, vanilla yoghurt and sour pineapple. Classic but simple. Maybe i’m spoiled when it comes to saisons.

2013 bottle, batch 8. Not my favorite of the CS beers I’ve been lucky enough to try, but still a very enjoyable low ABV saison with brett, wood and cereal notes. I think hop notes were more present when I drank this fresher, and I remember liking it a bit more.

Sample at CBC. Pours clear golden with a white head. Aroma is brett, wheat, hay, lemon, light spicy. Taste is light tart apples, sweet ripe fruits, dry woody notes. Light body, refreshing.

Bottle. Pours a clear yellow gold body under a one finger fizzy white head that faded to a wispy film. The nose is bretty and beautiful with some light delicate spice, floral, oak, and funk notes. Smells exactly like what I’d want a beer like this to smell like. The flavor is super delicate and light with nice brett, floral, funky, and earthy notes that really show off what a subtle delicat Saison can be if you don’t over spice the hell out of it. Perfectly dry, with the oak hints toward the finish adding an additional light tannic note that makes it seem even drier. Light bodied and very thirst quenching on a hot and humid summer day. Excellent beer.

2013 bottle. Pours a hazy golden straw with a thin white head. Aroma is vinous, with grape skins and lemon. A little grainy with the barnyard funk. Taste is slightly tart and sour with a barely detectable sweetness. Orange and lemon with an earthy funk. Grape skin bitterness at the end. Deep golden orange color, thick white head. Aroma of straw, farm animal dwelling, light citrus, and pineapple. Flavor follows with a smooth juicy finish. Truly a delicious refreshing beer.

(Bottle) Pours hazy pale golden with a white head. The holds citrus, minerals, tart fruits and subtle oak. Fantastic brett profile. The flavour dry, near medium acidic and tiny bitter. Citrus, tart fruit, wheat, crackers, light wood and minerals. The mouthfeel is tart and clean with medium carbonation. Light bodied.

Bottle bought @ Bierkompass.de. Pours hazy yellow with a rather thin frothy offwhite head that leaves some spotty trace on the glass while dissipating. Smell is slightly sour and fruity with sourdough crackers, lemon juice, lime juice, hay, mineral water, unflavored yoghurt, lemon zest, white peaches, pineapple juice, barnyard and mango. Taste is sour and slightly fruity with sourdough crackers, lemon juice, lime juice, grapefruit juice, hay, dry soil, white pepper corns, peach skins, white grapes, moist wood, star fruit, passion fruit and lemongrass. Mouthfeel is soft, dry, tart, tiny tannic astringent and light bodied. Finish is sour and tiny fruity with crackers, lime juice, hay, dry soil, moist wood, white grapes, white peaches, lemon zest and white pepper corns. Elegant, complex and very very tasty...

Hazy golden coloured body with a nice two centimetre white head. Aroma of sour grapes, water, grass and a lot of hay - very mild. Light-bodied; Very sour flavour of hay and grass with a big note of grapes and apples at first and a very subdued but sweet fruit flavour at the back end. Aftertaste shows a lot of fruit, some hay and grass but a very pungent yet flavourful sour note. Overall, a very nice beer with a great flavour and even better finish - great to sample, especially at the brewpub! I sampled this full pour (30 cL) on draught here at the brewpub in Denver, Colorado on 07-June-2014.
