COMMERCIAL DESCRIPTION
Vieille meaning “Old” is our artisinal barrel-aged Saison, lightly dry hopped. Each batch release is a diverse blend of Vieille casks that have taken on a soft Brettanomyces character before being lightly dry hopped. Dominated by a floral, citrusy hop character, a subtle herbal note and a tart finish, Vieille’s character exemplifies artisan Saisons.

Slightly cloudy dark hay color with a persistent pillowy head and lacing. Funky, cheesy nose. Dusty flavors with lot of lemon citrus and tart funkiness, but doesn’t finish particularly sour. Not without some flaws, but the complexity in the nose and taste makes this compelling. Bring me some oysters!

Keg at the Copenhagen Beer Celebration 2014 - yellow session. Yellow straw colloured pour with a steady white head that fades to s film. Sroma is funky, flowery hop, and some pineapple. Saison yeast, hay. Flavour is spicy pineapple, lemon, and funky musty notes with a touch of sourness. Palate is light and crisp, some tartness in the finish. Lingering dunky mustyness.

All around fantastic saison. Dark gold pour. Brett, wheat, grass, lemon in taste and smell. Balanced, crisp, slightly tart. Fantastic light mouthfeel. Could drink all day.

Une autre surprise de Peter. Marci mon Gerry! Batch 9, 2014. Un liquide doré qui s’embrouille. Une tête fondante et les balbutiements d’une dentelle. Des parfums de citron, de bretts et des arômes boisés légèrement épicés envahissent mon nez avec un bonheur certain. Des saveurs de levures sauvages, de fruits blancs, de jus de lime, de bois humide et de poivre rose rendent mes papilles bien heureuses. Au palais, j’y trouve un corps bien proportionné, jamais trop mince, bien aéré. La finale est sèche et citrique avec sa touche de houblons et sa levure marquée. Super facile à boire. Formidable accompagnement estival.

Hazy golden color with medium head. Deep aroma, old world style, spicy, some Brett, light lemon. Soft mouthfeel, lemony flavor with moderate acidity and a quite nice Brett presence.
Refreshing, interesting.

Batch 6 bottle from Davidsons Liquors Highlands Ranch, CO When I open a Saison, this is what I expect to find after the pour. And Earthy hay qualities in the aroma with some lemon citrus and ever so slight spice funk tail. The color and appearance what I expect golden yellow with good head and retention. From the carbonation, quite effervescent. Light flavor filled with Brett and tart with touch of hops. Cool & dry a great ale for complementing summertime heat.

12.7 oz bottle, batch 8. Misty golden brown with a lacy white head. Nose is yeast, vanilla, grass and light lemon zest. Creamy with a dull sparkle. Taste is lemon juice, bay leaf, vanilla yoghurt and sour pineapple. Classic but simple. Maybe i’m spoiled when it comes to saisons.

2013 bottle, batch 8. Not my favorite of the CS beers I’ve been lucky enough to try, but still a very enjoyable low ABV saison with brett, wood and cereal notes. I think hop notes were more present when I drank this fresher, and I remember liking it a bit more.

Sample at CBC. Pours clear golden with a white head. Aroma is brett, wheat, hay, lemon, light spicy. Taste is light tart apples, sweet ripe fruits, dry woody notes. Light body, refreshing.
