St. Bretta is our 100% Brettanomyces Whitebier that was just released this week! Not only is St. Bretta an evolution of Wild Wild Brett Orange, but also it will be ever-changing depending on the fresh citrus available that season. For our spring release we decided to brew St. Bretta with fresh Minneola Tangelo. Each seasonal release of St. Bretta will have a diverse range of citrus fruit added to keep the beer fresh and exciting (the summer release was brewed with blood oranges)!

Bottle from International Trade; hazy light amber pour with big creamy white head, big brett aroma, spicy taste and quite a lot of fruit mandarin, grapes, sweet and some tartness.

I assume this is 2013 version, but not 100% certain. Pours a light lemon ale wit a interesting pattern of white sheet atop - takes on a cheetah look with near concentric circles of break in the foam. Smells of manure, funk, soil, clay, hay, and some paper. Flavor is lemon, soil, tart, some of that minneola is coming through, some wit yeast and some light wheat character. I’m refreshingly surprised with the flavor here. Very light bodied with light prickly carb and an off dry finish. Fucking interesting beer. I know Brett isn’t supposed to form much acidity, and maybe it’s from the fruit, but damn this is refreshingly tart. A really excellent beer I was hoping would be only moderately tasty for the sake of my billfold. Great beer.

Bottle. Clear gold pour with receding white head. Aroma of cheesy bretts, light citrus notes, quite lemony, wet dough. Taste is tart, nice lemony finish. Light palate, good carbonation.

(375ml bottle) Pours a hazy yellow body with a small white. Aroma of orange, florals, tangerine, and mango. Flavor of orange, brett, lemon, earth, some vinous, tangerine, and bread.

Bottle @ home, courtesy of LeninCat. Hazy orange pour with a nice thick white head. Enormous citrus aroma. Tons of tart, citric character, some vanilla, wheat, and sweet orange juice. Hints of white pepper, grass, and some light funk. Flavor has a good sweet citrus note as well as a moderate acidity. Bread, yeast, and a hint of vanilla. White pepper, some slight funk, and and a crisp, tart finish.

375ml bottle shared by jcwattsrugger! Thanks John! Pours a cloudy light straw color with a thin foamy white head. Aroma of Brett, citrus, oak, and white grapes. Taste of grassy hops, Brett, hay, citrus, wheat, and a hint of oak.

Bottle shared at the goodbye jcwatts rating adventure. Poured a not so good looking milky yellow body with a smaller foamy white head. Aroma was soapy, with some citrus notes, green olives from the brett. Tight bubbly carbonation over a medium mouthfeel and a fizzyness overall round up the palate. Flavor is probably the best part about this one, nice brett funk, oak, dry breads, toast, lemons, band aid and medicine. Not bad.

12.7oz bottle, thanks to adnielson. Mostly clear golden color. Hazy with the last bit in the glass. Thin white head. Small ridges and ropes of lace. Nice, citrusy fruity sort of limey aroma. Lightly spicy, very bright overall. Medium body. Very bright, light, crisp carbonation. Lightly sticky in the finish. Moderate tart taste, pretty zesty. Moderate sweet taste. Very solid bretty belgian witbier. Very light, bright, and drinkable. Bretty funky citrus works very well with the belgian wit flavor profile. Still though, the bretty character makes this an entirely different type of beer than the typical awesome belgian witbier. Very good, but in a different way than the best examples are (which are awesome -- without brett). Orange, spicy citrus finish.

Bottle. Pours clear golden with a small off-white creamy head that laces well. Aroma is, well, odd. I smell some Brett, but its kind of bathroomy rather than barnyardy, and some fruit and wheat as well. Flavor is a DEFINITE improvement, with citrus, Brett (back in a good way), wheat, more citrus. Initial sweetness, drying out on the finish. Minimal bitterness and not much in the way of extraneous spices either, which makes me happy. Medium body, bubbly carbonation. A nice beer once you get past the aroma.

(375ml bottle) cloudy very pale yellow. Nose of tart citrus fruit, Brett, apricot, bits of herbal greens. Taste of Brett, citrus peel, tart stone fruit. Medium carb and refreshing.
