Bottle I brought home with me from a trip to Denver. Labeled batch 7/11, bottle 429/1599. Pours a light amber with a white fizzy head that dissipates quickly. Aroma is of light fruity brett funk with a hint of pepper and tartness. Taste is of tart saison with some rustic malt character popping in, then moving on to a light fruitiness with some creamy oat in the finish. Light bitterness and hints of european hops. Palate is tart and quite dry but very refreshing and smooth. Overall this is a good farmhouse beer with a great tartness, mild and balanced funkyness that presents itself as ripe fruit. Delicate in its approach, bright and playful in its flavors and really pleasant to drink. Great beer!

UPDATED: AUG 30, 2014 So I’m curious about why someone would call a beer brewed with wild yeast, a ’saison’. Hill Farmstead seem to do this too. Not that it really matters as long as the beer is damn fine. And in this case it is. Bottle at the Craft Beer Co. Clapham. Clear golden amber, small white head. Nose is tart, sour, sharp lemon, lemon rind and then some very clean minerally notes and clean white vinegar. Classic American sour. Very little funk. Taste is sour, tart, slight white vinegar, white apple, clean flinty minerals, very very slight horsehair blanket. Good lip puckering refreshing sour beer, with clean refined lines, but lacking the big pungent rustic flavours of Belgian lambics.

Wish lister. Cloudy orange. musty aroma. With extended oak aging critters and all, this really blurs the line between a Saison/farmhouse ale/wild ale. Heavy oak present in the aroma and especially flavor. Full flavored and bodied for 6% beer. Tart and fruity, with a dry peppery finish. I like this very much. 4.25 if I could.

Beer Bloggers Conference - San Diego - Big Belgian Siason flavor and aroma. Light barrel aging this was a super beer.

Batch 10. Dark Orange pour some froth. Aroma big funky oak barrels, tang, tart, butter. Tastes some horse, some tang, mild intensity. Flat carb, slight dry Finish. Uncompelling for a strong saison. Needs to take a flavor stand: get more intense in some way.

I poured this into a tulip. The appearance was a hazy golden color with a quarter finger white foamy head that dissipated within less than a minute. There was some light lacing here and there in a messy sort of way. The smell had some funky light grassiness with a light sweet lemon and then a tart lemon. The flavor was pretty much exactly the same. On the palate, this one sat about a medium on the body with a decent sessionability about it. The finish has an insane amount of a long bitter tart lemon. Overall, decent saison, its definitely different than what a lot of what I’ve had so far in my saison experience, but hey different can be good. I think I could do this again.

Pours hazy golden with a thin head that disappears completely. Aroma is burlap, funk, sharp cheese, dust, band-aid. Flavor is funk, lemon, burlap, big sour lemon, sharp cheddar, cellar/must/mold, and a grassy finish. Very nice.

Bottle (375 ml) from a coworker. Shady amber, low white head. Fruity and woody aroma with some soft funk. Light to medium bodied, medium carbonation. Dry with a light tart acidity.

A mild saison, slightly tart and funky, with a lasting finish, this refreshing drink is slightly carbonated, murky yellow with lasting rim and whispy head that laces the glass. I enjoyed it, Yeast and brett, salty and sour.
