Vieille meaning “Old” is our artisinal barrel-aged Saison, lightly dry hopped. Each batch release is a diverse blend of Vieille casks that have taken on a soft Brettanomyces character before being lightly dry hopped. Dominated by a floral, citrusy hop character, a subtle herbal note and a tart finish, Vieille’s character exemplifies artisan Saisons.

Stine (1747) - Minneapolis, Minnesota, USA - OCT 5, 2014
Fully hazed, smooth blonde. Punchy, definitive brett aroma. Gravel, pineapple, gruyere rind, limestone; farm and earth forward, thoroughly acidic. Staunch and steadfast in balance. Creamy, lemon curd sweetness, a bit soft and doughy, coated in delicate white sugars.

Zinging acids against musty earth, cardamom pods, cheese rinds and soft yellow fruits. Zesty and fervent in acidity; malt layering is hard to perceive, and the distantly present leafy hop and apricot skin presence is quickly dissolving. Detailed, but somewhat immediate in its complexity, and lacking for length.

Again, the high acidity in the lemon oil and gruyere rind combination is striking in its palate cleaning, enamel stripping power. The soft texture can’t quite compete. The makeup of the beer is aesthetically pleasing, even if its components are a bit aggressive.

375 mL bottle shared by my friend Scott. Thanks! Pours a hazy gold with a thin frothy white head. Good head retention. Aroma of funky, earthy notes, mild must and pale malt. The taste is pepper, funk, earth, spice, apple, pale malt. Medium bodied, high carbonation, lingering tartness. Nice beer.

Bottle (batch #10) into glass. Color is light, hazy straw. Smell is citrus and must; the Brett is very apparent. Nice, mid-level tartness. Light bodied. Dry. Really enjoy this one.

Appearance: Pale straw gold color, hazy, with a fluffy white head. Aroma: Very musty barn scent, old hay, souring fruit. Taste: Sour and tart but "middle of the road" in strength. Tastes very much like it smells, musty old hay. There is a light sweet wheat flavor in there. It is very good with a lot of complex flavors. There is a spicy hop aftertaste that is awesome. Palate: The mouthfeel on this is awesome. It is just tart enough without being puckering. Great carbonation volume but be careful when you open the bottle. Overall: I had this both on tap and in the bottle. It was more tame in the bottle, possibly because of more conditioning in the bottle, but it really helped mellow the flavor and bring out some of the hidden characteristics like the hops. I recommend it both on tap and bottle. Will drink it again if I can get more.
