Vieille meaning “Old” is our artisinal barrel-aged Saison, lightly dry hopped. Each batch release is a diverse blend of Vieille casks that have taken on a soft Brettanomyces character before being lightly dry hopped. Dominated by a floral, citrusy hop character, a subtle herbal note and a tart finish, Vieille’s character exemplifies artisan Saisons.

Nice pale yellow with a white thin head. Perfect carbonation. The aroma is pure Saison. Slightly tart with the yeast nicely evident. The hops come through on the back side, very subtle and work perfectly for a Saison. I will definitely buy this beer again.

Shared bottle. Very nice saison. My only criticism is the lemon needs to be toned down slightly. Otherwise a very drinkable session beer.

Backlog rating. 12oz bottle from beermerchants. It pours a hazy straw color with a medium white head. Aroma is barnyard, sour and oak. Taste is acidic, vinegarish, lightly bitter and hoopy with notes of barn yard, hay and citrus. Dryness from the oak, light lemon, gentle sour. Medium mouthfeel with lively carbonation. overall, delicious

Bottle from Luksus, Tørst Brooklyn. Pours a straw yellow. Fucking amazing Saison full of Brett and grassy tones. Cloves, spices, yeast and Brett dominate the taste. Anything with Brett is a fucking winner for me. ---Rated via Beer Buddy for iPhone

Fully hazed, smooth blonde. Punchy, definitive brett aroma. Gravel, pineapple, gruyere rind, limestone; farm and earth forward, thoroughly acidic. Staunch and steadfast in balance. Creamy, lemon curd sweetness, a bit soft and doughy, coated in delicate white sugars.

Zinging acids against musty earth, cardamom pods, cheese rinds and soft yellow fruits. Zesty and fervent in acidity; malt layering is hard to perceive, and the distantly present leafy hop and apricot skin presence is quickly dissolving. Detailed, but somewhat immediate in its complexity, and lacking for length.

Again, the high acidity in the lemon oil and gruyere rind combination is striking in its palate cleaning, enamel stripping power. The soft texture can’t quite compete. The makeup of the beer is aesthetically pleasing, even if its components are a bit aggressive.
