Wild Wild Brett is a series of R&D beers created to showcase the versatility of Brettanomyces, a yeast found naturally all over the world. Historically considered ”wild yeast”, Brett is responsible for 100% of the fermentation in the bottle you hold. Green, the fourth installment of this series is our nod to absurdly hopped beers. Showcasing the Australian Galaxy hop, W.W.B.G. uses 4 lbs of hops per barrel with dank tropical fruit hop characteristics dominating the flavor and aroma.

Bottle. Pours hazy orange with thick, frothy, white head; decent retention and spare lacing. Aroma brett, leather, horse blanket, lavender, floral hops, cookie malt, and some grassy notes. Flavor is sweet malt, grassy hops, floral notes, light sour notes, and light biscuit; crisp, dry finish. Medium body and high carbonation.

Bottle. Pours with a hazed yellow hued body with a lasting white head with good retention. Aromas are intensely funky, barnyard, bandaid, sweaty horse, hoppy, minty and a bit grassy. Flavors are tasty. Grassy, funky, bubblegum, brett, phenolics, mildly sweet tropical fruit, lively bubbles, quite dry. Slightly dank.

I’ve been passing up Crooked Stave beers due to the price but I thought I’d give them one more shot. I grabbed this one because I read it was very hoppy, it is indeed very hoppy. The aroma is very candy-like, sweet like oranges and a bit of pineapple juice (maybe that was the brett?). I did make sure to let this warm up to room temperature but I still did not get any funk type aromas from this. I smelled it for awhile before I sipped it because the aroma was quite interesting. The flavor was a little bitter at first and then sweetness, then just hop dominated. Mouthfeel is nice. Overall this is a good beer and very interesting that it was fermented only with brett but I still can’t get past the price tag, its too expensive for me and I’d rather have bought a Saison Brett. Pours slightly hazy golden with a huge white head. Aroma has notes of malt, brett, spices and tropical fruits. Taste is light sweet, medium bitter and light to medium sour with a very spicy, white wine and dry finish. Body is medium, texture is thin to oily, carbonation is soft.

Bottle @ fonefan tasting. Hazy golden with a huge and lasting off-white head. Aroma is dry, malty, bretty, notes of white wine and rather hoppy - grass and fruity. Flavor is medium sweet, rather bitter and light acidic. Dry, moderate bitter and light acidic finish. 091112

Bottle, 7% @ FOneFan. Unclear dark yellow with big foamy white head. Aroma is malt, fruit, hop, yeast, spices, brett and flowers. Flavour is malt, brett, very dry, fruit, little flower, hops, bitter, white wine and a little grass.

Bottle, 75cl. A slow gusher, producing an enormous, dense, off-white head. Unclear, golden body. Funky nose with lemon and a generic fruityness. Very bretty, almost soapy. Lots of hoppyness, and a quite bitter flavor. Very dry, and combined with the bitterness it almost makes you drink constantly to wet the palate. Funky, lemony and very bretty. Very long finish. An intense, extreme beer in many ways, smelling and tasting nice at first, getting better as I drink. 121109

Bottle @ fonefan tasting. Huge creamy head with excellent duration. Color is hazy golden. Aroma and taste are rich hops, flowers, brett, white wine and malt. Nice and dry. Lovely beer.

Bottle at Crooked Stave shared with Thirdeye11. Pours a cloudy orange color with a large white head. A huge nose of hay and fruity hops. The flavor is awesome: sharp and dusty Brett, hay, light fruity hops mix in with the dusty dry flavors, some sweet candy struggles through. Very big flavors with a perfect soft palate. Awesome. This is dead on delicious.

In short: A very bright a lively brett IPA. Superb stuff
How: Bottle 750ml. Consumed probably fresh, a few weeks after receiving it from adnielsen, thanks a lot Aaron
The look: Cloudy orange body topped by a large white head with good retention
In long: Nose is an explosion of bright brett, sharp fruity hops (tropical fruits and citrus fruits) as well as far from subtle cat piss (I suspect Citra here or else there is another way with brett IPA to get cat piss aroma). Body is crisp, full, semi-fluffy and as lively as my favorite session true Belgian ale. In mouth the bright hoppy hops mixed with the sharp brett bring a fresh grapefruits, orange peels, tangerines, more. Very sharp but not too intense bitterness. It is up there with the best brett IPAs I’ve ever had (Midnight Sun 3767, Bullfrog Undead, first batch of Mikkeller USAlive!, others…) except Hill Farmstead E which is in a class of its own. My wife absolutely loved this beer, and it is hard to express the happiness I feel to turned my wine-loving wife into a true beer lover, very hard, extremely hard, impossible to express in fact, I wish my wife would stop drinking from my beers.
