COMMERCIAL DESCRIPTION
Wild Wild Brett is a series of R&D beers created to showcase the versatility of Brettanomyces, a yeast found naturally all over the world. Historically considered ”wild yeast”, Brett is responsible for 100% of the fermentation in the bottle you hold. This second installment of the series incorporates fresh Minneola tangelos, bitter orange peel and coriander in an unfiltered, slightly tart wild ale. Orange pours a golden hue delivering tropical fruit aromas and bright orange citrus flavors with a tart earthy finish.

750ml bottle - batch 8/11, bottle 391/1125. Lots of carbonation - open carefully. Pours a slightly hazy yellow gold with a huge fluffy white head that retains well and laces the glass.

The aroma is bready malts with lots of orange rind and brett and some floral earthy notes.

The flavor is milder than expected. Sweet tart oranges and some acidic funky brett. The mouthfeel is medium bodied with slightly sharp carbonation and is slightly watery.

Overall, I really like this one. It’s milder than expected, but is well balanced. I really like how the orange and brett go together.

KajII (463) - Macon, North Carolina, USA - MAY 26, 2012
Bottle. The pour was a murky medium orange with a large white pillowy head that lasted throughout and had excellent sheeting of lacing that totally coated the glass. The aroma was all about the citrus (tangerine and orange peel) with a big funky Brett yeast, a mild grain malt and a slight sourness. The taste was about the same as the aroma, lots of tangerine and a sweet tartness early on with the finish being about the same with a slight orange peel bitterness and a sweet sour ending. The flavor lasted a really long time proceeding the swallow and again was all about the tart citrus flavor. Mouthfeel was light in body and watery in texture with a almost champagne like carbonation. Overall and exquisite tasting brew that had the sweet and the sour blending perfectly together along with a bold citrus presence and a ticklish carbonation, YUM...

Bottle at WtWBA Brooklyn 2012. One of the last beers I tried. Pours a golden, orange body with white lacing. Aroma is orange tic-tacs, orange peel, and funk. Mouthfeel is medium with nice carbonation and a soft delicate palate with notes of orange tic-tacs, funky tart, freshly cut orange slices, and a nice earthy spice.

Pours a cloudy golden orange color with a hug white head. Citrus on the nose, in the nose, all over the place. Intense orange and tangerine aroma to this. A subtle tartness and yeast contribution. The flavor is slightly tropical with even more citrus to it. Moderate bread/malt flavors with a nice funkiness from the Brett.

750ml. Pours glowing orange with wispy white head, gushes more times than not. Lots more brett in the nose after 8 months, but aroma is still juiced out tangerine funk. Nice brett flavors, light musk/cheese, bright orange fruit. Super prickly bubbles on tongue, like most CS beers the mouthfeel is excellent. Perfect mid-summer’s day brew. Fun, light and funky.

750ml, batch 8/11, bottle #692/1125. GUSHER WARNING. As soon as I lifted the cap, this puppy exploded all over my kitchen, causing me to lose about half the beer. Not cool. Anyways, the pour yields a hazy, bright, glowing golden-tangerine amber body. An initially massive column of explosive, off-white froth slowly collapses to a clumpy, craggy, lasting layer. Jagged flares of lace dry hard to the glass. The aroma is very Jolly Pumpkin-esque in its brett-heavy, dusty funkiness, though this brew is more fruit-forward than anything I’ve had from Ron Jeffries. Tropical pineapple and slightly sweeter tangelo are prominent, layering a mostly dry, citric acidity over top that mildly sweet wheat malt base. The fruity tones marry the brett beautifully. Nice nose on this one. Flavors don’t quite match the delectable bouquet. The citrus concentrates and comes across sweeter, pushing much of the acidic tartness of the pineapple aside. Similarly, the brett seems less dry and buggy, melting into the wheat base more than I thought it would. The result is a kind of orange glazed whitebread cake effect, with a mild mustiness coming through on the back end. Still good. The palate is more substantive than I’d like, but it is well carbonated, keeping it on its toes. I would have thought it would attenuate down a bit more, considering the massive gush that came on the open. Overall, a pretty solid second effort with a commercial brett beer. Definitely room for improvement though.

(Draught) Pours a clear amber body with a small off-white head. Aroma of orange, toasted grain, vinous, and light barnyard. Flavor of orange, pineapple, coconut, toasted grain, coriander, florals, vinous, tangerine, brett, and butter with the butter lingering in the aftertaste.
