COMMERCIAL DESCRIPTION
Wild Wild Brett is a series of R&D beers created to showcase the versatility of Brettanomyces, a yeast found naturally all over the world. Historically considered ”wild yeast”, Brett is responsible for 100% of the fermentation in the bottle you hold. This first installment of the series, dubbed rouge, incorporates hawthorn berry, rose hips and whole hibiscus flowers in an unfiltered, slightly tart wild ale. Rouge pours a reddish hue delivering soft floral aromas and tropical fruit flavors with a tart earthy finish.

Bottle. The pour was a deep murky reddish orange with a huge (3-4 finger) off white fizzy head that quickly receded down to a thin layer with a small collar thus creating some fair spotty lacing. The aroma was funky to say the least of a grain malt and a barnyard scented wild yeast, along with floral and berry esters and a good strong note of Brett yeast. The taste was sourly sweet with a note of berries early on with a sour acetic taste forming rather quickly along with hints of floral herbs and Brett yeast towards the end. The flavor lasted an average amount of time after the swallow, with a tart floral flavor along with a mild berry presence left to linger on the taste buds. Mouthfeel was just a little beyond light in body and had a strong dry texture with a pronounced prickly carbonation. Overall a very interesting brew that had a nice tartness and a mild sweetness working in conjunction with one another perfectly, making this one hek of an enjoyable brew.

Bottle thanks to Niels ! Pours a murky rusty brown color with a finger of white foam. Nose is a mixture of earthy wood, tart floral funk and a touch of composted leaves. Palate has nice integration of adjuncts with lots of underlying autumn fruit, apple cider, some cranberry lingering tea and mushroom earthiness. A little murky but still a solid beer !

750ml bottle huge thanks to adnielsen and Lukaduke! Pours cloudy red orange with big head. Nose is floral fruit, tart acidic wildflower, rose, some berry, funk. Taste is acidic floral fruit funk, some mixed red berries, musty oak, touch of spice. A bit murky and round on the palate. Finish is sour funky brett fruit, some spicy cherry and floral wild berry. Of the whole set this one is probably showing it’s age the most but still fun to drink and pretty tasty.

Tasted on 2/8/14 from a gusher of a 750mL bottle at the RBWG Grand Tasting courtesy Aaron Nielsen, big thanks! Pours hazy amber-orange with a massive off-white gusher head that leaves rocky lace. The nose is floral rose, and spicy hibiscus with a tart yeast aroma. The flavor is more rose, more malt, and the same spicy/tart yeast. The body is medium with over-active carbonation, and a long spicy yeast, hibiscus, and rose finish.

UPDATED: AUG 11, 2014 Psyched to run through the whole set. Past it’s prime though :( my fault. Still a fun night with the gang at Sante. A- lightly hazy reddish hue pour with an off white head that thins quickly. S- obvious musty floral quality is blunt. Hibiscus, dandelion, clover, orange blossom, lemon and some banana all attend. Yeast is also strong on the back. M- light to medium syrupy body. Very mild carb. T- strong brett and cheese funk with bubble gum, hibiscus and orange. Mid palate shows latex, zinc, clover, lemon, grass, sweet tarts. Ending is spearmint, dandelion, butter, and grass. Probably better if opened earlier.

Sample @ RBWG Grand Tasting. Hazy amber pour with a small head. Nose of lemon sherbet, peppery dirt and leaves. Taste is lemon, cherry skin. Lightly acetic. Some berry compote. Light body, bright. Quite pleasing.

750ml bottle thanks to Dave. Pours out a hazy golden topped with a white head. Nose is medicine cabinet bandaid and brett. Taste is not good just as the nose with bandaid. Ps this bottle sprayed all over.

Golden peach colors. Fruity tart peach smell. Sour tart taste with the zip of bubbles texture all over your palate. Dry but very refreshing.

>> Thanks to adneilsen for the share! GUSHER. Pours a full haze orange amber with beige foam. Phenolic, minerally, funky nose. Taste is olive, plastic, band-aid, extreme minerally, slate. Tannic, chalky, overcarbonated body. Sort of weird.

Bottle thanks to Aaron at the 2014 RBWG grand tasting, thanks! Pours a cloudy light amber with a pink hue and a gray head that dissipates to the edges. Aroma has a musty wood note with some grain, light tartness and a bit of funk. Flavor has a bit more tartness but is mainly very funky with earthy grain and must.

RBWG14 Trip Rating #100. Bottle shared at the Grand Tasting. Pours a hazy amber color with a large fizzy tan head. Decent head retention. Aroma of tart berries, earth, rhubarb, pepper, funk. The taste is dark fruits, vegetal notes, olive, mild funk. Medium bodied.
