Pours a semi-hazed auburn. Half finger off white head shows poor retention. Light lacing on the sides of the glass just fall back into the beer. Ripe sweet cherries and raisin really come out in the aroma which I found to be very pleasing. Some caramel malt, alcohol, yeast and biscuit are in there too. The flavor is heavy with prune juice and raisin. The cherry component is actually quite tart. A spicy bitterness presents itself, but it does not last. Very little Belgian yeast notes. Medium mouthfeel. Carbonation is average. Texture is watery.
This beer is a good take on the style, although it tastes a little "young." It is tasty without being too heavy.

Bottle. Brown and a little murky, but looking more American than Belgian. The aroma, and no surprise the flavor, are both super sweet, overpoweringly sugary, and not in the high octane way the master Belgians are. This is sweet grape, not yet raisin, and downright artificial sweetener-strength sugary wetness. (#5857, 11/15/2014)

Bottle. Pours a hazy medium amber with a off-white, fine-grained, blown-insulation head. Nose is burnt sugar, pickles, cardamom, and roasted peanuts. More vinegar on the tongue; there is some plum and raisin, but that malic/acetic edge mars what might otherwise be a pretty decent stab at the style. Some sweetness as well. Finish is prickly and sweet/sour. Average.

Pours a hazy dark amber with an off-white head. Head dissipates quickly, Aroma is sweet plums. Taste is fairly complex with dried fruits, fig, and some caramel. I don’t really like how it sits on the palate and has some off flavors.

Pours a cloudy ruddy reddish brown with one finger of tan head. Nose is pretty bad, oxidized and stale with little to no nuance. This just leaves much to be desired in a sort of indescribable way. Flavor is stale and bleh, old tasting. Not putting more thought into describing this one….

Pours amber with off white head. Had at Foamfest in Fayetteville. Slight malt aroma. Slightly sweet. Medium bodied decent.

Rated on 5-16-2011. This bottled beer’s appearance is a medium sized frothy, very fizzy head with a moderate retention, transparent orange body, slow rising carbonation, and virtually no lacing. The aroma is malty, toffee, semi-sweet, and fruity. The taste is sweet, some malt, fruity, and some toffee. The mouthfeel is smooth and watery. This beer is light-medium bodied. This beer’s flavor is a let down since this is one of my favorite beer styles to drink/rate. It lacks character, the flavor is on the weak side and it left me not wanting this beer again.

Crown Valley Big Bison Ale has a thick, fizzy, cream-colored head, a murky, lighter, reddish-brown appearance, but with a brilliance, when the sunlight catches it, a thin lace sheeting, and racing bubble streams. The aroma is of rich, sweet, fruity, bread crust, some booze, brandy, and rock candy. Taste is of all those elements, with specifically fig, caramalized syrup, and a noticeable, but not harsh, bitterness. Mouthfeel is medium and somewhat slick, and Crown Valley Big Bison Ale finishes semi-dry, dessert-like, and sip-able. Overall, this is a most excellent beer and another winner from the brewery. RJT
