A blend of Centennial, Liberty, Cascade, and Citra aroma hops by the sack full – then dry hopped during conditioning using our ‘Hoptimizer’ (Industrial sized hookah).

Cask at Craft Beer Co, London on 18th January 2012. Clear amber with white foam head declining to a ring and a fair amount of lacing. Aroma was lemon citric, rich with maltiness and a touch of cheese. Main taste in-mouth was richly hoppy, savoury notes present and intense cheesiness - cheddar. Slight saltiness. Finish very hoppy - grassy and bitter - cheesiness decreasing to leave a delicate lemony finish. Zingy mouthfeel. Absolutely exquisite - one of Dark Star’s best beers in my experience!

Cask, handpump at The Evening Star, Brighton,Saturday 5th May 2012 I’ve had this before at Peter Fowler’s, Shoulder of Mutton, Wantage, Oxon but clearly never got around to rating it, something I tend to do more & more often these days. Pours mid amber with a white head. Sweet initially but with a good hoppy punch. Nice fruity tang but really lovely beer tasting very much as the style suggest, wonderful fresh juicy zingy hops. Cask at the William Webb Ellis (JDW), Twickenham. Pale amber with a tight white head; aroma of apricot jam; starts with some fresh leafy hops, then a honeyed fruity sweetness, then the hops kick back in again with a sustained, prickly, drying finish. Good stuff.

Pint at Mason & Taylor. Smells pretty fantastic, immense floral hops. The taste doesn’t quite live up to the nose and so I enjoyed it more while it was cold!

Keg at The Old Fountain, London. Pours clear, yellow-gold with a foamy white head. Plenty of old pee in the aroma, with some citrus and sweet bread. Medium to big sweet flavor, more urine, wet grass, lightly tangy and heavy and ripe citrus, grapefruit. Medium to full in body with fine to average carbonation. Sticky, lightly resinous finish, very sweet, with light white bread and lots of ripe citrus. A pretty big British IPA. Nice.

Cask (Bitter Virtue, Southampton) - Golden in colour. Grapefruit, peach and passion fruit in the aroma. Tangy and hoppy taste with notes of grapefruit, toffee and peach. Tasty and enjoyable.
