Grass and loads of buscuits in the aroma. Taste is mildly sweet, tiny hopbite but very malty. Maybe this bottle is past it´s prime? Biscuit is the word for this. A rather tame hoppy ale.

07/09/2013 330ml bottle. Dorata, limpidissima, schiuma bianca abbondante, mediamente persistente. Naso stanco, note fruttate, leggermente agrumate e pinose, biscotto, caramello, non pulitissima. In bocca conferma le stesse sensazioni, non freschissima, caramello preponderante e amaro stentato. Corpo medio, carbonazione soft. Deludente per gli standard di Dark Star.

BOTTLE. Head: off-white, medium, frothy, avg. retention. Colour: copper, clear. Aroma: caramel dominates the hops, citrus hops in the background, some pine. Taste: hop bitterness upfront, caramel, some neutral/saltyish notes in the middle and more hops in the zesty finish. Nice IPA.

Bottle. Amber beer with large head and a touch of lacing. Aroma of citrus and grapefruit. Taste is pine resin hops, orange, earthy yeast and a little grapefruit. Quite bitter. Medium bodied and a touch oily. A very good IPA.

My Bottom Line:
This finely effervescent IPA develops pine and flowers in a dryish, classy mouthfeel.

Further Personal Perceptions:
-A sheet of foam covers the deep golden.
-This might lack aromatics for my tastes in the style.
-Earthy undercurrents are found.
-The resinous hop bitterness is well balanced with the rest of the brew’s medium intensity.
-These guys’ really know how to develop perfect mouthfeels, whether it’s in the bottle or on cask.
-Drinkability is very high.
