MALTS: 2-row, C-60 ADJUNCTS: 60 lbs of Local Wildflower Honey from Burnside Farms HOPS: Hop Union Experimental Variety, Mosaic, Simcoe, Cascade ABV: 8.5% BACK STORY: Here at DC Brau we love our hoppy beers. This is our latest attempt in seeing how many hops we can fit into a DIPA and I think we’ve hit a new mark. This beer clocks in around 100 IBU, similar to OTWOA but uses 4 different varieties instead of 1. Alpha-Domina-Mellis was also brewed with 30 lbs of Wildflower honey from Burnside Farms in Haymarket, VA that was added at the end of the 90 min boil and then 30 lbs added directly into the fermenter on the second day of primary fermentation. TASTING NOTES: Alpha-Domina-Mellis leads in with a peach-like color and a distinctive tropical / pineapple like nose with a hint of breadiness. Mouthfeel is light and crisp with a huge, lingering bitterness provided by the huge dose of experimental hops that were added early in the boil. What the drinker is left with is a bitterness that won’t quit followed by a heavy tropical, fruity, "juicy fruit" bubblegum like aroma with a lingering aroma reminiscent of star fruit and stone fruit.

12/27/2014. On tap. Clear amber with a white head. Spicy, hoppy aromas, citrus and floral notes. Light caramel flavors followed by a hoppy finish.

On tap at Frisco. Pours hazy dark golden color with a very thin layer of white lacing. Huge citrus aroma with some pineapple and dank resiny pine. Grassy malt start with big big citrus flavors. Followed by big juicy grapefruit then dank pine resin and finishing with grapefruit rind. Big bitter finish. Sticky resiny mouthfeel. Lots of fresh pine and citrus flavors.

Keg @ GBD. Hazy light Amber with a small head. Hugely vibrant aroma. Dank grapefruit, tropical undergrowth. Flower patch. Mango fruit leather. Mouthful of flower petals and nectarines. Extremely dry chalky finish. Slightly peppery. Medi body, soft carb. Nice!

Tap at Frisco Tap House. Pours lightly hazy orange with a medium, creamy off-white head, medium retention with good lacing. Aroma is citrus, pine and resin hops with pear and pineapple esters, light biscuit malt. Flavor is moderate hops and bitterness, lightly sweet biscuit malt, fruity esters and a dry finish. Full body and medium carbonation, lightly astringent.

Growler shared by RussianDragon. Thanks man! Murky orange body with a thin, off white head. Aromas of melon, orange, hops. Honey flavor. Medium sweetness. Juicy, resinous hops. Alcohol is subdued. Not as delectable as OTWOA, but still tasty.

Growler pour dark hazy peach/amber color with white creamy head that fades quickly. Super ripe pineapple aroma. Medium mouthfeel, sticky pine resin taste. Bitterness lingers on back of tongue & throat. Overall a great DIPA.

Two ounce taster at the brewery. Aromas are tropical fruit, honey, grassy, dank. Flavors follow. Not sure about the honey. Their tasting notes are correct - long lingering bitter finish.
