Moderately sour, lightly bitter flavour. Quite subtle, not too complex. acrdz (4361), Boulder, Colorado, USA Jun 2, 2008 Updated: Jun 3, 2008750ml bottle 2000 vintage consumed in Brugge (also had 2 year old draft at Weekend of Spontaneous Fermentation 2008, which scored only 3.2)
Pours wheat colored orange with a small white head. Mild funky cheese and wheat in the nose, creamy and funky character all around, really well developed. Very mellow, and definitely more centered on the mild funk/feet/cheese than on fruit or citrus. Acidity is medium-low, the texture is very smooth and creamy and rich, and a small frothiness builds into a drying leather and peach rind finish. Very flavorful and rich, aged well. Dense nose, dense flavor.
