4.1 AROMA 8/10 APPEARANCE 5/5 TASTE 8/10 PALATE 4/5 OVERALL 16/20 DaSilky1 (2575) - San Diego, USA - APR 17, 2011
I got this bottle in a trade a while ago and have brought it to several tastings and at each one, it was completely ignored and I ended up taking it back home at the end. So now I find myself cracking it open all by my lonesome because my unrated beer selection is dwindling...it pours with gigantic frothy, lacy, creamy looking head..the body beneath is dark brown/mahogany...Nose...hmm..Well...smells like it’s been blessed with a wild yeast strain or two, so that’s always nice..otherwise, maybe a little white pepper and fruit....it’s not an overly intense nose, so it’s hard to decipher...but there’s certainly touches of tartness and funk. Flavors...hmmm..yeah, another hmmmm...it’s got a full, playdoughy malt body...somewhat earthy yet plasticy, akin to older vintages of fantome noel (maybe even newer ones, it’s been a while since I’ve had a Fantome Noel). The base yeast is not overly belgian yet at the same time, it’s not non-belgian either...it’s a good strain and I like it...over that, I think there’s some wild creatures in there as well because, though not even remotely obviously wild or tart tasting, there’s a rustic funkiness present that probably wouldn’t be there otherwise. There’s some dark yet sweet fruits especially plum (lots of sweet ripe plum, actually), a touch of some licorice and tobacco possibly...end ends with a plum skin astringency too, which has the elements of wild yeast characteristics in it. To be quite honest, I don’t really know which elements were contributed by the various barrel treatments..nothing stands on it’s own as saying "Hey, I’m whisky" or "Hey, I’m Cognac"..but regardless, it all actually blends together surprisingly coherent...It’s malt forward before yeast forward, which is always nice in a belgian...but you can tell it’s got some sort of house character yeast thang going on as well...and did i mention the plum? I reckon I dig this beer...will most definitely never see this available to me again, so I will leave now to enjoy the experience.

4 AROMA 7/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 17/20 PhillyCraft (606) - Philadelphia, Pennsylvania, USA - APR 8, 2012
Bottle. Special edition version lagered for three months on oak, aged in 1/3 whiskey barrel and 2/3 cognac. Split with Pat for his re-emergence back into the beer game. Poured a deep, bloody, chestnut with a massively complex, thick, khaki colored head. Gothic church window spiderweb lacing. Aromas and Flavor are chocolate, pepper, cedar gruit, sour black cherries, dutch smoked gouda, vanilla, whiskey oak, slight funk. I was already a huge fan of the normal Embrasse but this one took the cake. Full bodied rich flavored belgian that outlived my expecations. Awesome.

66cl bottle #16382
3.8 AROMA 8/10 APPEARANCE 4/5 TASTE 7/10 PALATE 3/5 OVERALL 16/20 nearbeer (2656) - Knoxville, Tennessee, USA - NOV 9, 2011
0.66 L bottle, wrapped like a gift with a tag, and no label on the bottle inside. Tag says number 16855. bottled April 2011. Just shy of opaque, the chocolate body has a lasting centimeter of sticky, creamy foam. Sweet alcoholic nose of vanilla, whiskey, chocolate, roasted peanut, toffee, and a hint of smoky char. Taste is less sweet than expected: front has more char and toast blended with the sweetish chocolate and caramel that show up in the middle. Earthy toast and peanut, whiskey, ash and light oak help to dry the finish a bit. Medium body is a little sticky, and hot for 9%, but a nice sipper.
