DewBrewer (249), Austin, Texas, USA Jan 2, 2007 Bottle at Erasmus on 12-19-2006. Golden/amber color with medium head and nice lacing. The aroma is quite lemony, perfumy and port-like. The tartness is also there in the aroma. The flavor has the tartness of a green apple but it is that typical De Dolle flavor. Yum. It’s pretty carbonated and does not taste very oxidized, even at this point. The balance of sourness, funk and sweetness is heavenly but I’ll admit to being a lush for De Dolle and Fantome beers. Simply delicious.

The aroma is of oxidized malt with earthy and yeasty notes. Notes of pears and red apples as well. Light fruity flavor and semi-sweet. Mild tartness upon warming. Aroma is yeast and caramel sweetness. Pretty complex nose. Flavor is sour and tart, but also has a fair amount of sweetness. Medium bodied and drinkable. Pours a very murky, tarnished orange color; off-white, patchy head with fine-bubbled lacing; a few pepper-like particulates at the bottom. Nice, toasted, complex De Dolle yeast in the aroma; some dry caramel notes from a light oxidation; very complex, intriguing aroma. Medium-to-full mouthfeel: chewy candy / Belgian sugar, reasonably oxidized (caramel), with some fluffy carbonation; intricate yeast, maple syrup, and breadiness. Tasty, messy, yeast-forward beer; slightly muddled.
