Rich flavors. Deep deep taste. This is one of those really nice beers that you fork over the extra dollars for every now and then. Lovely.

Pours a mellow orange golden with clumps of flocculated yeast and a lucious rising head that sticks around for infinity and leaves delicate lacing. As for "taste evolution" it starts off strong in the nose with dark yeast, buttery, perfumy hops, some unusual citrus. Cantoloupe pops up on the tongue along with more dry tart yeast (seems a specialty with De Dolle), champagne effervesence, strong bitterness towards the finish, with definite alcohol presence through all stages. I’m not a huge fan of tripels, but this has enough idiosyncrasy to keep things interesting.

Bottle, from Fin. Thanks! Apricot pour, lots of ridiculously thick white head, lingering in clumps that look like you could scoop them up and use them to shave. Aroma is unapologetically strong--a big peppermint alcohol presence. Spicy pepper, brine, apricot, a little bready yeast. Tastes a whole octave lower than it smells: the pepper fire is here too, but there is a lower, dark cardamom accented malt as well. Very drinkable for such a strong beer, but warming too. Something about this makes me think of sipping good bourbon. Another well-crafted beer from De Dolle...

12oz bottle, 2004 vintage, courtesy of mj. Thanks, Mike! Pours a hazy, particulate-laden yellowish-amber color; white head with great retention and lacing. Exceptionally dense aroma profile: candy sugar, yeast, and bready notes; exquisite white pepper and yeast character. Full mouthfeel: dense, yeast and candy sugar; white pepper; slight viscosity; vanilla and toasty grains; beautifully complex and balanced. Just awesome. Lengthy, candy sugar and doughy finish.

Not sure of the vintage, the only date I see on the bottle is’98, but I’m not sure if that has anything to do with bottling date. Pours hazy golden with a massive rocky/foamy off-white head. Strong citric aroma of lemon/lime zest, a ton of yeast, and a strong overtone of caramel. Flavor is semi-sweet with a really nice note of caramel upfront that quickly gives way to a dry spicy/zesty mid-palate, some grassy/herbal hops in the finish, and an undertone of candy sugar throughout. Palate is medium, lively carbonation, dry, and full of yeast and herbaceous spice.

Truly, a winner among the many Belgian brews. Taste is rich and complex with many flavors of herbs, fruits a taste of caramel. The Alcohol hits you hard and doesn’t let you go. A must try for beer lovers

The aroma is sweet and citrusy with yeast and spice. The appearance is hazy dark gold with a large head. The flavor is like the aroma and is a little acidic. The palate is OK but the finish is soapy. This is a quality beer just not my thing.
