As for "taste evolution" it starts off strong in the nose with dark yeast, buttery, perfumy hops, some unusual citrus. Cantoloupe pops up on the tongue along with more dry tart yeast (seems a specialty with De Dolle), champagne effervesence, strong bitterness towards the finish, with definite alcohol presence through all stages. Apricot pour, lots of ridiculously thick white head, lingering in clumps that look like you could scoop them up and use them to shave. Aroma is unapologetically strong--a big peppermint alcohol presence. Spicy pepper, brine, apricot, a little bready yeast. Tastes a whole octave lower than it smells: the pepper fire is here too, but there is a lower, dark cardamom accented malt as well. Very drinkable for such a strong beer, but warming too. Exceptionally dense aroma profile: candy sugar, yeast, and bready notes; exquisite white pepper and yeast character. Full mouthfeel: dense, yeast and candy sugar; white pepper; slight viscosity; vanilla and toasty grains; beautifully complex and balanced. Just awesome. Pours hazy golden with a massive rocky/foamy off-white head. Strong citric aroma of lemon/lime zest, a ton of yeast, and a strong overtone of caramel. Flavor is semi-sweet with a really nice note of caramel upfront that quickly gives way to a dry spicy/zesty mid-palate, some grassy/herbal hops in the finish, and an undertone of candy sugar throughout.
