Nose is a delicate grain and apple funk, wet biscuit, yeast, and candied sugars. Taste is dominated by notes of biscuit and sugars. The carbonation is rich and lifts up notes of caramel, spice, and yeast. I could not detect any alchol, however that was likely because I was sipping on gold label moments before. Like many De Dolle beers this one stinks of what I would consider a flaw in other beers, yet I conceed. Huge nose of dark apple cider, the unflitered sort.
Honestly, this beer has apricots, some light red fruit, fresh buttered toast, and nice creaminess. Hauntingly as familiar as Blanc de Noir Champagne, really.
Behind that is another world of fresh stone fruit and layers of exotic spice as the rambunctious CO2 expands over the palate and lets these flavors seep into every nook and cranny. As the beer finishes a coating of spiced pears rests on the tongue with a touch of cream and a grating of fresh nutmeg. Yes, it is complex. Allen (1282), Switzerland Jun 28, 2009 Bottle 33cl from crackedkettle.com. It pours a murky golden beer with a tall white head. Cork, melon and grape in the nose. Really true to the style. Grape, white bread, coriander, melon, cork, orange and earthy hops showing up in the taste. Decent bitterness. Full bodied. Long bitter finish which is reminiscent of cork and melon. This tastes a bit heavier than other triples, probably because I’m sensing more malt. A strong flavor of dried fruits. Alcohol flavor is evident, but not overpowering considering 10%abv. Thick, rich honey-golden color (dirty but wonderful) and the head took years to dissipate! Aroma of pilsner malts, lemon, honey, piney hops, orange. Sweet, yet also a dry austerity in there. Sweet, strong flavor with honey and lots of fruits like cherries and apples. Big alcohol burn as well. Maybe too evident. Very interesting, though, like but then unlike any other tripel. Extreme. Naka (524), Indiana, Pennsylvania, USA Jun 9, 2009 Pours slightly hazy golden orange with a 2 finger fizzy white head. Lasts for a couple of minutes. A lot more carbonation than I thought there would be considering the cork almost blew out by itself. Aroma is a grassy straw funk with some apples and perhaps golden raisins. Flavor has a strong bitterness with some cotton candy sweetness. A slight brown sugar malt. Extremely dry with a nice warming alcohol. Body is very rich. A solid find while on vacation.
