Nothing quite like a special bottle of Stille Nacht on Christmas! Pours nearly flat with a cloudy, rusty golden color. After a minute in the glass, a thin head with large bubbles materializes. The aroma is subtle and feels locked up... like it will break out with age. Right now, it is filled with cherries, oak, vinegar, caramel, and some moldy funk... incredible. On the palate, the beer has an almost oily texture that is cut through by the mild carbonation and the acidity of the flavor profile. The flavor is complex as notes of sweet red fruit, wine barrel (shock), lemon mix with others in a fleeting fashion... almost ethereal. Finishes mildly tart, but I’d never call this sour. Killer beer right now and will age with the best of them, for sure.

Bottle 750ml. Pours deep copper/orange with low-medium off-white head. Good lacing. Aroma is of alcohol, barley sugar, vinegar, acidity, wine. Taste is of alcohol, barley sugar, acidity, belgian yeast, very slight cardboard. Palate: Full bodied. Soft carbonation. Overall: Good. A bit flander’s brown-like.

Couleur cuivrée ou orangée, un peu tangy, bois et fruité, oxydation, traces de vin, onctueuse, bulles tranquilles, pêches, petites baies. Suspicieux dès le départ, très bonne à l’arrivée malgré le développement de quelques notes acides qui arrivent sur le tard.

My rating no. 5000, a nice celebration of both 5k ratings and my 40th birthday at the same time. :-) Pours a clear deep bronze-hued orange body with a large rocky off-white head, sparkling with promises of beery delight. Aroma is red berries, tart lactic notes, wood, red wine, candi sugar, vanilla and hints of alcohol, caramel, yellow apple peel, spices and acetic acid. Taste is caramel, red berries, wood, yellow apple peel, tart acetic tones, red wine and hints of grains, candi sugar, alcohol and vanilla. Medium to full body, high carbonation, semi-dry finish. Highly complex and pretty unique in its composition, this is honestly one hard beer to wrap my vocabulary around. Almost more like a sour beer or even a sort of wine, this barrel aged version of Stille Nacht really stands out from the regular version. I guess it will continue to evolve even more into the sour/vinous territory but aided by micro-oxidation it might take more unpredictable directions. Hopefully I will taste this one again in the future. A hugely interesting beer, definitely worthy of summing up my "career" on Ratebeer so far and a great companion for this 40th birthday night cap session. Cheers to all you wonderful friends and Ratebeerians out there, what a great journey to have been on with you over the past 6 years! :-)

Bottle shared at the Kenny 20K mega monster tasting. 15/01/2016. Many thanks to Matteo for this one. Hazed caramel orange coloured pour with with a small off white froth head. Aroma is tart fruit, grainy caramel, alcohol, grape fruit. Flavour is composed of tart prickly blood orange, brown bread, some caramel, sweet and sour, tangy finish. Some oak and red wine in the finish. Palate is semi sweet and sour, tart and prickly, frothy, Warming alcohol. Lingering tart. Orange.

Bottle share at Kenny’s 20K, many thanks to Matteo for this one. As ’De Dolle Stille Nacht Reserva 2010’. Vibrant orange, hazy, lightly sparkling, small ring of white head. Aroma is a little plasticky, airy malts, soured fruits, maybe some oxidation. Body is light, tingly carbonation, smooth. Taste is tangy and sour, red wine, tannnic, tart and woody. Is more sour and red wine-forward than the 2000 Reserva. Both are very tasty beers.

75cl bottle shared at Kenny’s 20K celebrations @Chriso’s, thanks to me. Incidentally, this is also my 5K rate! It pours a hazed light amber color with small white head. Aroma is sweet bold lightly oxidised with notes of tangy orange peel raisins rum an red berries. Taste is tangy and quite acidic with notes I lemon juice and orange peel, then some more sweetness from raisins rum and red berries. Closes quite sharp acidic and palate cleansing. Medium bodied with lively carbonation. Overall, really good and complex

Backlog. Bottle ->mini snifter from Churchkey Vintage Vault event. Copper with small white head. Dark fruit, Belgian yeas and spices, oak, vinous notes. Complex, with the ABV well hidden. Very good.
