3.5 AROMA 6/10 APPEARANCE 4/5 TASTE 7/10 PALATE 4/5 OVERALL 14/20
330 ml bottle - probably traded a bit too much - madeira has kicked in too much. Tried to filter this out of it. Hazy light golden with a thin head. Aroma of brown sugar and some peach (and dust). Medium mouthfeel with a slight heat punch from the alcohol, nice acidity and peppery finish. Taste of spices (especially kardemon), exotic flavours and brown sugar.

3.3 AROMA 7/10 APPEARANCE 3/5 TASTE 6/10 PALATE 3/5 OVERALL 14/20
Bottle @ Kulminator, Antwerpen - BE. Color: clear golden blond beer with high carbonation and high white foam. Smell: caramel and alcohol domination. Dry alcohol boozy nose. I think about Calvados barrel aged. Taste: full body with sweet caramel malt balanced with dry alcohol notes. Very strong alcohol taste. Quiet good but not so balanced for De Dolle beers. Aftertaste: dry, alcohol, fruity and body.

3.8 AROMA 7/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 15/20
September 4, 2015. Bottle at Kulminator.
Cloudy dark golden with a small white head.Aroma is sweet fruity, vinous with grapes, peach, apples, plum, sugar, toffee, wood, red wine, alcoho and some earthy damp cellar notes. Taste is sweet, malty with toffee, sugar and peach, light dry grape skin tartness with some oak notes in the finish and warming alcohol. Medium bodied, soft carbonation.
Good, tried it side by side with the regular 2005 and I preferred that one, didn’t have the higher alcohol notes that this one had.

Bottle - Lots of sweet fruity almost stone fruit notes. Cloudy gold with no head. Lots of intense stone fruit, cumquat and some odd spice. Lovely for the age.

4 AROMA 8/10 APPEARANCE 3/5 TASTE 8/10 PALATE 4/5 OVERALL 17/20
Bottle at Kulminator. Finally. Orange copper colored beer. Strong aroma of cognac, white grape and vinous raisin. Taste is quite different from other beers, with soft raisin, caramel, white grape, boozy wine and a warming finish. It’s like a marriage between a barley wine and white port. Good stuff.

4.4 AROMA 9/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 18/20
330ml bottle given by Fin to a couple of people he had never met before (Mat and me). We decided to share it, so on 8th Dec 2014 five of us tasted this wonderful beer during the December Shrewsbury Bottle Exchange Group meeting. Just lovely, what a pity all five of us turned up! You can read what other people have said about this beer because I did not take notes, I just savoured the moment and relaxed with my small portion while the world rushed by.

4.8 AROMA 10/10 APPEARANCE 4/5 TASTE 10/10 PALATE 5/5 OVERALL 19/20
UPDATED: JUN 21, 2015 Five years after the legendary Stille Nacht Reserva 2000 was made, as the first Belgian beer matured on barrels of other kinds of beverages, it was repeated, but almost wholly exported to the States, like so many other terrific Belgians. Tasted at the Kerstbierfestival of that year. This is the ’newer’ Stille Nacht matured on wine barrels, with a deep amber colour and thin but creamy, yellowish head; aroma and taste reveal a baffling complexity, immediately attacking the nose in an incredibly seductive way... Banana, amaretto, limoncello, liquorice, red wine, orange, sweet sherry, vanilla-like tannins, honey, yoghurt, pepper, grapes, cider and so much more. Well rounded, soft and full palate, extremely fruity, extremely vinous with drying tartness, mild bitterness in the finish with the same strong alcohol as in the basic beer but somehow mitigated by woodiness and tannins, very long and utterly satisfying. I was sincerely flabbergastered by this, this is certainly the best of all the good Dolle brews I had so far, and in fact one of the best Belgian beers I ever had the pleasure to taste, unfortunately only in a very limited quantity... World class masterpiece, like its 2000 predecessor.
