COMMERCIAL DESCRIPTION
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

UPDATED: JUL 5, 2015 2015/04/25 - Vintage 2012 from Kulminator in Antwerp. Pours a hazy, dark orange/amber colour with a thick foamy, off white head that lingers and laces nicely. Aroma is yeast, dough, molasses, sugar, gingerbread, cinnamon, apple and fruits. Taste is sweet; molasses, gingerbread, candi sugar, with bread notes and some nice apple/fruity flavours. Mouthfeel is medium and oily with average, smooth carbonation and a sweet, boozy, warming finish. Really great stuff. ---Rated via Beer Buddy for iPhone

330ml bottle from Belgium in a Box - Hazy yellow, ugly looking beer to be honest, nose is bready. yeast and warm pizza dough. Taste is fresh and apple at the start, dangerously drinkable, then ends with a generous warming feeling as it goes down. Palate is thick and oily. A real gem. Looks can be deceiving.

UPDATED: JUN 1, 2015 Shared 11.2 oz. bottle poured to snifters, showing a cloudy, orangey gold color, with frothy, white head foam, and waves & spots of lacing. The nose was a touch of yeast, ripe fruit notes as apple, subtle spice, and vinous-like character. Medium bodied, with lively carbonation, the taste was tart, adding citrusy & earthy bitterness, noticeable, but fairly disguised alcohol presence, with an effervescent finish. Quite enjoyable! Another shared bottle at Tim’s 40th included a bit of noticeable funk to the yeast, added more ripened fruit as lemon, & stone variety, more exposure to the alcohol, and a tart & dry finish.

HopHeadSamurai (4) - Roma, ITALY - MAR 25, 2015 does not count
Bottle at Gradi Plato Epiro, Rome. Orangish with golden reflctions, pretty turbid. A little persistent foam layer with just some little bubbles. Aroma is pretty intense, but not particularly lasting. Marzipan and bread, canned fruit, raisin. Coming to tasting, I have to say: Great body! Really dense, almost creamy mouthfeel. Start sweet, then you can appreciate a sour note, then remains a medium, dry, persistent bitterness. We can distinguish fruit, sugar, spices (pepper). Alchol flavor is soft despite the ABV. Amazing in its complexity, perfect for aging.

From the bottle, this beer simply smells like beer. Unable to distinguish anything. When poured the aroma evolves into apple and champagne. The taste works in the other way, first the champagne clone and then an overloaded taste of alcohol. Clearly not my type.

Ambrée trouble, sédiments en suspension, effervescence moyenne-forte, col blanc abondant. Principalement maltée, fruitée (prunes principalement) sans être trop sucrée, trop d’alcool, légère amertume sur la fin.

Bouteille. Robe ambrée limpide, mousse blanche timide. Nez sucré et levuré sur des arômes de baie de genièvre et de pruneaux. Bouche sirupeuse et biscuitée aux accents de miel et de vergeoise. La final propose une jolie amertume avec des notes d?épices , de prune et de fruits confits.

Maakun (1626) - The Hague, NETHERLANDS - MAR 2, 2015
Bottle at home. Light Amber with a light haze, white head that leaves a long lasting ring. White grapes and apple, quite some champagne and cider notes, light musty and herbal. Big sweetness with marzipan, canned peach, cake, apricot pie, light spices. Mainly sweet going into light fruity tartness and has a light bitter finish. Full bodied with full carbonation. Great stuff.

20/02/2015 @ home - 33cl bottle from de Hopduvel. Orange like colour with off white head. Aroma and taste : fruity, sweet, boozy, warming, creamy mouthfeel. Just a bit too much alcohol on this one, maybe still to young, but however already a very nice beer.
