COMMERCIAL DESCRIPTION
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Contrairement à la plupart des bières de Noel, celle ci n’est pas noire ou brune. Bière très complexe et riche: agrumes, miel, épices, alcool présent. Indispensable... et à laisser vieillir !

Bottle from Cornelius Bruges. 2012 version. Somehow expected this to be dark, but slightly hazy gold with energetic fizz. First impression is that it’s way too sweet for me, but after 2-3 sips it’s full character comes through. Fruity in a plum/raisin way, and wrapped in that warm boozy blanket that never overpowers despite being up front. There’s a zing here too though, both on the palate with little tingles at the sides of the tongue, and in the taste which veers from that sweet fruity booze to a medium dryness with hints of clove and banana along the way. Packs a punch at 9am too! Very good indeed.

Bottled: On Friday I had a bottle of this and I was too wasted to rate it ... ; ; Toffee apple covered over butter and booze ..white grape covered in chocolate brownies and tart bitterness . Fucken good sipper... beautiful texture .

33cl in a Delirium Noel glass. Pours a bright orange colour with lots of carbonation for such a strong beer. Almost quadruple-like in its richness and flavours. Tremendously strong in flavour and alcohol. This beer does not hide its ABV well. Very boozy and (along with Aventinus Eisbock) the strongest (tasting) beer I have sampled. Very good and will evolve with age - good job I have some for Christmas 2014 and 2015 cellaring.

Pours a copper color with three fingers of fizzy eggshell foam, some floaties. The nose is a steady mix of fruit fuji apple, white grapes, pepper, clove and a touch of sweet wildflower honey. The palate follows the nose and is boozy yet very drinkable. Nice balance of sweet grainy fruit and boozy yeast profile. Pepper, cinnamon, honey, apple, fig some earthy almost cognac booziness. Bitter finish with some heat.

Bottle at home (2013). Pours hazy amber with a fast fading white head. Sweet, fruity, flowery, aroma with yeast and alcohol. Sweet, fruity, taste, some alcohol, and a bitter finish. Nice thick feel, but a bit harsh still. Would probably really like this when aged.

Amber coloured beer. Sweet aroma with something of bubblegum. Taste is sweet. Raisins, tropical fruit, honey but also because of the high alcohol content what liqueur-like.

Pours a hazy amber colour with a frothy white head. Complex aroma of exotic fruits, apricot, grapefruit, banana, yeast, spices, hops, some alcohol. Flavour is exotic fruit sweetness, yeasty, some alcohol warming. Modest bitter, spicy aftertaste. Very interesting and enjoyable brew!

Bière ambrée avec un beau col épais qui développe des senteurs de fruits confits, de sirop de malt et d’esters alcooliques. En bouche, la gorgée est dense avec un profil sirupeux moyen à la saveur de pain d’épices avec un arrière goût légèrement suret (sucre fermenticide?) et un relent de levure. La finale amérisée est minérale et florale assez longue avec une touche de fruitée (levure + sucre) faisant penser à la banane et la mangue. C’est une ambrée très savoureuse légèrement surette bien charpentée en alcool et en malt aromatique .
