COMMERCIAL DESCRIPTION
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Bottle, spec brew 2005, enjoyed 10 years after bottling. Pours light hazy golden with some sediments, and a nice creamy off white head. Aroma is sweet roasted malts with bread, rum raisins, prunes and dark fruits. Full, velvety creamy body, with soft carbonation. Flavour is roasted malts with bread and toffee, notes of nuts and wood, and dark fruits with raisins, prunes and figs, as well as kandi and nice sherry notes. Lingering sweet malty finish with wood and dark fruits. Still beautiful after ten years.

Bottiglia. Color ambrato carico con un cappello di schiuma compatta e persistente. Aroma stupendo, sembra un dolce natalizio, frutta candita, zucchero, caramello e frutta sotto spirito. Al palato si riprendono tutti gli aromi, l’alcool si fa sentire un pochino e riscalda la bevuta. Favolosa.

December 29, 2015. Bottle, vintage 2010 and 2015.
Hazy dark orange with a medium sized white head. Aroma is sweet malty and fruity with candi sugar, caramel, dried fruit , grapes some cloves notes and spices. Taste is sweet, soft bitter. Finish is sweet with bread, candi sugar, dried fruits, some banana and grapes, very soft bitter grass and hay notes. Medium bodied, soft carbonation.
2015 was too young with a bit too much glue notes, fruity esters and slightly harsh grassy bitterness. 2010 was much better, sweeter with more dried fruits and softer bitterness.

From 2010. Pours amber with a thin white head. Dades, apricot, prunes, orange peels and caramel. Flavours; Dades, prunes, apricot and caramel. 2010 is way better than the 2015.

Bottle from JefVerstraete, thanks! Initially bursting with red fruit, it soon becomes a beery interpretation of white wine, enriched with notes of coriander, cardamom, peppery phenols, apricot, sweet citrus and herbs. It’s very sweet, almost syrupy but the discernible ABV justifies that. By discernible ABV I mean only the warming touch on the palate, as I didn’t get any boozy notes. Excellently balanced, very rich beer for slow sipping.
