Appearance is a beautiful amber honey. Frothy small head with tight bubbles. Maybe the lightest 12% Ive ever seen in color. Aroma is a powerful sweetness, which is a mix of chocolate and caramel. Smells a bit like a candied apple. Palate is one of the finest Ive ever tasted- increadibly rich creamy feel from start to finish which is amazing. Taste is the only thing that knocks this down slighly- its warm and boozy feeling and has light malts with the sweetness and some dry hoppiness aftertaste. but this is a bit flat in flavor compared to the aroma in my opinion.
Overall a fine world class ale.

UPDATED: MAY 15, 2015 (2011 version on tap @ Mikkeller Bar Viktoriagade, Jan 8 2015) Pours a hazy medium orange with a small lacy off white cap. Aroma of peach and orange sweetness and lemony acidity, candy sugar light but there, slightly burnt/dark sweetness, yellow raisins, spices. Palate is super vinous with yellow raisins and grape juice, orange peel, golden sugar sweetness all the way through, herbal yeasty sort spice mix it in the middle, some non alcoholic apple cider on the drier finish, hop bitterness moderate for style, light acidic undertone but less than on nose. Lingering concentrated dried fruit mix and dried herbs on aftertaste. A little alcohol heat. Medium bodied with high carbonation. Very complex and a fascinating sipper.

Aroma is apple. Taste is light apple golden sugars. Lots of floaters. Not much of a head. Mouthfeel is buttery and perfect. Taste is also light buttery.

2014 vintage, bottled, etregourmet. Effusive rocky white head, fragrant with a yeastiness reminiscent of apple blossom, wild honey, pollen, fermenting apple sauce, some jenever-like alcohol. Taste adds some marzipan malt and more orchard fruit yeast complexity to that aroma while remaining fairly light, non-unctuous nor sticky for the abv. Very subtle tart bretty note - probably ages with some gain? Accomplished heavy hitter with potential.

De barril en el XXXII The Great Power of Beer&Wine.
Una gran cerveza, unica en su genero, ademas si pensamos a una cerveza de Navidad. De color ámbar claro y espuma densa y persistente, en nariz hay frutas maduras, plátano y chuches, en boca encontramos en principio el dulzor de la malta, que rápido desaparece detrás del acidez y un final ligeramente amargo regalan un equilibrio sin igual.

Bottled 330ml. -from Magic Beer Room Zagreb. Vintage 2014. Clear dark golden coloured, minimal white to off-white head, notes of yeast and white wine in the nose (not so pleasant to be honest). Sweet malty, yeasty, fruity, heavy alcoholic and decent spicy with notes of wood and dried fruits. Also some cidery notes of apple and medicine alcohol in the finish. This one is hardly a good beer...or just a bad batch.

De Dolle Stille Nacht has a very active, overflowing white head, a murky, gold-gray-yellow, bubbly appearance, and heavy lacing left on the glass. The aroma is of light fruits, candy, white bread, and cream cheese cake frosting. Taste is similar, with low bitterness and noticeable bitterness. Mouthfeel is medium, and De Dolle Stille Nacht finishes semi-dry and boozy. RJT

Le graal. C’est une excellente bière. Un bouquet puissant, du corps, un goût unique. Testée et approuvée au coin du feu l’hiver.

Bottle (2013 on cap). Deep amber dark pour with an nice head. Lots of hints in the aroma. Fruits, tart, candy, brown sugar. Very complex taste. Almost different per sip. In the beginning some carbo with light fruits and some sour notes. Sour notes get pushed to the back when the beer warms up. A very sweet beer then comes forward. Good, belgian-ale, sweet finish. Complex indeed. Very good brew altough I prefer the Easter beer from De Dolle Brouwers at the moment.

Stille Nacht perfectly matches the brewers intent. As a Belgian Christmas Ale, the Stille Nacht delivers. The aroma is rich with spice and fruit, the sweet scent tantalisingly lures you into your first taste in what turns out to be a blissful experience. The deep cloudy bronze, coupled with a rich head, present an absolutely stunning beer. Spice, rich fruits and lingering sugars engages you fully, and reward the effort of finding this Ale. Highly recommended.
