Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

330 ml. bottle. 2010 date on cap. Pours a hazy golden orange with a decent white head. Aroma of fruit, yeast, and spice. Taste is apple, peach, malt, yeast, spice, and caramel. Wish I could find more of this.

33 cl. bottle from 2014 @ home, gift from Barend. Hazy amber with some sinking yeast flocks and a dense white head. Fruity yeasty aroma with some candy sugar. taste is sweet with an underlying alcohol sweetness and a sour note. Mouthfeel is very creamy with a slight alcohol warmth, which is really gentle for its 12%. very long warming finish. Wonderful complex winter warmer.

UPDATED: FEB 8, 2015 Stille Nacht 2014, uitgeschonken in Oerbier glas. Oranje mistige kleur met veel gistdepot, veel zwevende gist deeltjes met een bescheiden witte schuimkraag. De smaak is zoet en kruidig, in balans gebracht door de bittere hop tonen, enigszins wijnachtig. Top product van de Dolle Brouwers. Complex, en aangenaam zoet als een dessert. Smaaktonen van winterse kruiden en specerijen. Als kruidkoek of appeltaart. Specerijen als kaneel en vanille zijn aanwezig, alsook gedroogd fruit, rozijnen, appels en abrikozen. De carbonatie is licht, en het hoge alcohol percentage van 12% is knap verborgen. De afdronk is zacht en kruidig met zachte hop tonen. Geen wonder dat de Stille Nacht is verkozen tot beste Belgische Kerst/winterbier, werkelijk een uniek product op de biermarkt. Een aanrader voor de echte bierliefhebber tijdens de donkere dagen van het jaar.

UPDATED: MAY 15, 2015 (2011 version on tap @ Mikkeller Bar Viktoriagade, Jan 8 2015) Pours a hazy medium orange with a small lacy off white cap. Aroma of peach and orange sweetness and lemony acidity, candy sugar light but there, slightly burnt/dark sweetness, yellow raisins, spices. Palate is super vinous with yellow raisins and grape juice, orange peel, golden sugar sweetness all the way through, herbal yeasty sort spice mix it in the middle, some non alcoholic apple cider on the drier finish, hop bitterness moderate for style, light acidic undertone but less than on nose. Lingering concentrated dried fruit mix and dried herbs on aftertaste. A little alcohol heat. Medium bodied with high carbonation. Very complex and a fascinating sipper.

Appearance is a beautiful amber honey. Frothy small head with tight bubbles. Maybe the lightest 12% Ive ever seen in color. Aroma is a powerful sweetness, which is a mix of chocolate and caramel. Smells a bit like a candied apple. Palate is one of the finest Ive ever tasted- increadibly rich creamy feel from start to finish which is amazing. Taste is the only thing that knocks this down slighly- its warm and boozy feeling and has light malts with the sweetness and some dry hoppiness aftertaste. but this is a bit flat in flavor compared to the aroma in my opinion. Overall a fine world class ale.

Bottle courtesy of Deanso. Poured a hazy medium amber with a round bubbly white head. The aroma is sweet sugary malt, caramel. The flavour is moderate sweet with a big alcoholic malt toffee caramel palate. Medium bodied with soft carbonation.

2005 vintage bottle shared thanks to Deanso. Had numerous vintages many times but never actual rated it, I’ll rate on a vintage as that’s the best way to have Stille Nacht. Pours hazy murky golden brown with a ring off white head. Aroma of caramel, porty aspects, toffee, light dank and moldy, really showing the age but in a way that works so well with this beer. Flavor is heavy sweet, booze from the fresh version is gone. Full bodied with very soft carbonation.

Bottle at Brony Tasting, DC. Aged by Travlr, but someone opened it. I’m glad at least I enjoyed it! Rosy brown, foamy gray head. Sweet raisin, red fruit. Full lovely flavor.

2014 vintage, bottled, etregourmet. Effusive rocky white head, fragrant with a yeastiness reminiscent of apple blossom, wild honey, pollen, fermenting apple sauce, some jenever-like alcohol. Taste adds some marzipan malt and more orchard fruit yeast complexity to that aroma while remaining fairly light, non-unctuous nor sticky for the abv. Very subtle tart bretty note - probably ages with some gain? Accomplished heavy hitter with potential.
