Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

UPDATED: JUL 17, 2013 Poured copper. A huge white head. Nose is spicy, hoppy, candy. Body is full, carbon lively, texture pretty oily. Taste is sweet and semi-sour. Palate with grassy hops, grapefruits and hints of bitterness. Heavy dry bitter & sweet finish. B@H

Golden brown and clumpy cloudy with a ringed white head. Nutty sweet, redcurrant raisiny and a buzzing candy sugar that leads into the initial taste. Neat bitterness throughout but there’s a cakey creaminess. Carbonation is clean and oily. Fading sweetness on the finish and a classy sealed bitteriness.

On tap at lost nation: pours cloudy golden with a nice white head. Aroma is grapes and funk. Taste is grape, honey, sugar, more sugar, more honey, and Belgian yeast. Way cloying ly sweet. Medium to heavy body, nice carbonation. Not for me.

2013 bottle. Aroma is boozy, like a tripel with even more alcohol. The body is very rich and heavy, comparable to a quad, maybe even thicker. The flavor is full of different sugars, sticky, complex, sweet but not too sweet. Creme brulee, hints of vanilla, rum barrels, candi sugar. Warming. A perfect Christmas beer.

Troebel donker geel bier met schuim. Smaak is krachtig, kruidig en zoet, kandij, drop, anijs. Licht bitter. Blijft lang hangen. Top bier wat ook in de zomer goed smaakt.

UPDATED: AUG 24, 2014 An old bottle, end 1990. Expiry date around 1996. Cellar kept bottle, dusty and intact etiquette. Just beautiful, no words can describe the intense character this beer has obtained over 20 years. Pours amber with a small vanishing head. Who cares, cause the aroma is overwhelming! Undescribable even. Slight tart, full body, slightly sour, heavy melasse, cream, grass. What a balance! Since early 2000 this batch has been my favorite... and hardly any beer has stand up to the test. One of a kind. This old Silent Night - and I still have some bottles left - is most evidently one of the best beers around. Even a 5 year old one beats the vast majority of best rated beers. Try to taste one if you can, nothing beats this experience! Sleep tight, silent night. A younger bottle, around 1995. Pours a clear amber; what a clarity! Hardly any residue in sight, tiny foamhead sticking to the glass and remaining present during the whole session. Even sticks to the glass long after. Explosion of soury, red forest fruits and brettanomyces-ish aromas. Wood, slight booze, pomegranate, prune aftertaste. Everything I’m gonna put here will be an understatement anyways. One of the best beers around, fresh and aged. Second pour : yeast residue appearing (better not drink this as it creates a headache the day after: trust me). Even more wood and soury fruits. Sticky splendor! Waaw! Bottle 2013 : The typical but unique aroma and taste a Silent Night always guarantees. Aroma is caramel, apple with a touch of honey - medium body - booze kicks in slowly - low carbonation - soft hoppy aftertaste. Sugar lingers on, which is nice.

Bottle at chez Clem. Dark Amber color with a disappearing white head. Full body and medium carbonation. Taste of alcohol and of sweet but with a spicy aftertaste. Very well balanced and very interesting.

Bottle from Dranken Pauwels. Pours a rich golden clear amber, with a large white bubbly foam head, which dissipates to thin. Some floaty bits. Nose is exquisite. A grainy, sweet, citrousy tripel, with sour vinous notes, sherberty sugar, fruit syrupy, and then lots of dried apricot, dried plum, dried mango, white grape, spicy. Taste is sweet, pungent alcohol, lots dried apricot, grainy barley, vinous, light citrous bitter, and then on the finish some nice fruity sherberty candy sugar.

Mézszínű ital krémes habbal és aszalt gyümölcsök illatával, melyben leginkább aszalt sárgabarackot vélünk felfedezni, amint tejszínes-mézes öntetben fürdőzik. Íze nemkülönben fantasztikus élményt nyújt. Az édes jelleg, mint vélelmezhető alapíz természetesen megfogalmazódik bennünk az illat alapján, de ez az édességnek olyan mesterien lekerekített formáját adja elő, hogy csak ámulunk. Amikor az első korty a szánkhoz ér, valamiféle szirupos, ragacsos jellegre számítunk, mely azonban a legkevésbé sem lesz az, az édesség foka ugyanis hirtelen megáll egy bizonyos ponton, még időben visszafogja egy kellemes kesernyésség, mely ízek tökéletesen összefonódnak, és bár idővel némiképp intenzívebbé válik édeskés karaktere, mégsem lesz túlságosan nehézkes és lehengerlő. Meghitt esték italaként szolgáló valódi különlegesség.

UPDATED: JUN 4, 2014 2013 bottle. Hazy dark orange color, small foam head. Aromas of blue cheese, yeast, nutmeg, canned apricots, sun dried tomatoes (the dried kind, not the kind preserved in olive oil), hint of laurel. Blended to perfection. Winter stuff. Quite a boozy smell I might add. Taste is absolutely jam-packed with herbs and spices, nothing I have ever tasted before. Nutmeg, freshly ground peppers, laurel. If this does not accompany a hearty winter meal like meat stew or rabbit, nothing does. Amazing. Develops beautifully, all the tastes fade away nicely, a slightly boozy kick follows (but it is accompanied by a nice taste of orange zest) and it ends in a very modest stickiness. Would rate it even higher if the carbonation was better; it lacks somewhat in this respect.
