Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

33cl bottle from bier tempel, brussels. Dark copper color with thin to medium head. Carbonation is ok. Medium sweetness and low bitterness. Aroma is caramel and woody. It’s a nice beer, but I expected much much better...

From bottle (2015 bottle) @ Basement Beer Bar Juleølsmagning. Light malty aroma, wheat, light hops, light yeasty banana. Hazy amber with white, fully lasting head. Heavy sweetness, light+ bitterness. Full body, oily texture, avg. carb., sweet finish with moderate alcoholic feel.

2011 bottling. Powerful beer with absolute truckloads of malt sweetness. Not quite at GABS one-off beer stupidity but on the way. Funky fruits mid-palate with a small lining of bitterness late. Pure treacle. Slutty but hard to ignore. Should keep for at least another 2 years.

F: average, white, not long lasting, diminishing to thin film. C: dark yellow/orange to amber, hazy, non-transparent, A: malty, sweet sugary, nuts, some hoppy tones, yeast. T: 0,33l bottle from De Hopduvel in Gent, huge malty, sugary, alcohol warming, nice fresh grassy/earthy hoppy tones, dried fruits, apricots, biscuits, full complex body, still not aged but great already, a must beer for Belgian Strong Ale.

Bottle from Voldby. Pours a pale, hazy yellow with a big, white head. Aroma is floral, spicy, sweet, slightly boozy, yeasty, pear-fruity. Slight hops. Taste is surprisingly light and fresh, dry, spicy and bitter, but with a nice, fruity malt sweetness to it as well. Yeasty spices and a pretty high carbonation gives this dry impression. Medium full bodied.

Pours hazy amber colored with a creamy flat white head. Aromas of strong spicy malts, orange peel and cinnamon. Taste has delicious spicy malts, sweet brown sugar and some gingerbread. Goes into a very spicy, malty, fruity finish, slight alcoholic warming.

2014 Bottle at home, 7th November 2015. Pours with a big gush, appearance is straw yellow with lots of ugly floaters. Aroma is spice, booze fruit. Taste is hop, spice, banana, quite sweet, easy for the ABV, but not sure it’s necessary.

hazy bright amber colour, minimal off-white head; aroma of dried fruits, mostly figs, some plum, raisin and apricot, vanilla, caramel and floral notes; taste is also complex with dried fruits, syrupy sweetness, vanilla and spicy alcoholic notes; excellent ale!
