COMMERCIAL DESCRIPTION
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Bottle. pours a hazy bronze hue with floaties and a small white head that fades quickly. The aroma is complex and citrusy sweet. Notes of pineapple, cloves, leaves, dough, are among the plethora of scents. The mouthfeel is on the lighter side for an ale of this alcohol strength. Plenty of complex citrus notes and a fair level of malty sweetness make up the body. A bit of cloves, honey, coriander, hickory, mostly slightly acidic, spiced flavors are here. This is a pretty good treat, maybe not as dense as I’d like a winter brew to be. Jeez, I’m just nitpicking now. Excellent beer, well done.

33 cl bottle from Etre Gourmet. 2011 Vintage. Pours hazy yellow with a medium offwhite head. Sweet aroma with fruity notes. Medium carbonation, medium bitterness, medium sweetness, strong alcohol notes. Too fresh ? Leaves a thick compact layer of yeast in the bottle.

2000 Vintage from Akkurats cellar. Looks: clear copper brown with small head. Aroma: complex, sugars, vinegar, berries, leather very nice and complex. Taste: sweet sour, vinegar, fruity, complex and hard to describe. Interesting brew!

Bottle. Pours a cloudy amber color with a moderate white head. Nose has some heavier fruit elements to it with some yeastiness. Taste has some sweetness to with the fruit elements coming through, but definitely drinks like it’s 12%. The alcohol makes it a tad harsh for me.

2009. Heller, sehr hefiger Antrunk mit intensiver Getreidigkeit. Belgisch, alkoholisch, gut. Intensiv, vollmundig, ab dem Mittelteil ist der Alkohol nicht mehr erkennbar. Hell, hintergründig allerdings z. T. Zuckrig. Gut! 11/13/9/12/11/12

The aroma is sweet, fruit, bread. The appearance is slightly hazy amber, white head. The flavor is sweet, bready, fruity, candi sugar. The finish is pine, lingering fruity sweetness. Full body. Excellent.

Bottle. 2012 vintage. Rich, ripe, blast of peach, banana, ripe golden apple, orange citrus and honey.. which quickly transitions to concentrated Belgium yeast and spice nuances.. Followed by more tropical, banana, pineapple, spice and honey nuances in the loooong finish... Lingering flavors of Belgium candi sugar and ripe, tropical nuances which coat the palate. Thick and rich, yet balanced with tons of flavor.. While big and bold, 12% alc is well hidden by concentrated flavor.. Very big.. and very Belgium.. I would bet this would develop nicely with age. A wonderful night cap. Don’t serve to cold. Worth experiencing. --- tasted while on a long journey to understand the world around me...

Side by side ’99 and ’12 bottles @ Kulminator. The ’99 pours a very deep, ruddy concentrated red color. The ’12 is much light amber in color. Perhaps a recipe change took place in the intervening years? The nose on the ’99 is rich toffee, apple, candi sugar. The ’12 is moderately hoppy. More earthy, forest mushrooms and caramel. The ’99 tastes very sweet. Apples and flabby toffee. Rich, thick malty sweetness. The taste in the ’12 is much hoppuer. More lemon and caramel-covered berries. Hot wood. FUll body and smooth for both. The ’99 frankly tastes a bit knackered. The newer vintage was more appealing.

330 ml bottle. Pours a clear dark copper color with light head. Aromas of orange zest, licorice, and phenol. Flavors of burnt honey, toasted malts, spices, and bitter orange. Very nice overall.

Bottle. Aroma honey, plums, fruity. Colour lightly hazy golden. Taste rather sweet, honey, caramel, light fruits. Spices show themselves a moment later. Ginger, orange, cloves. Finish too sweet for me. Want to rerate in future under better conditions.
