COMMERCIAL DESCRIPTION
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Pours a beautiful bright, lighter shade of gold w/ medium sized creamy froth. Aroma is of sweet lemony herbs. Full nectar / soft residual effers. Flavors of sweet lemon drops, caramel, slight leather w/ a kick ass asprin burn on the finish to balance out. Very complex. It’s a sweeter brew but the big hopy asprin finish acts as a palate cleanser. I just wanted to keep drinking it. Not a trace of flavor from the 12% alcohol. Amazing. Highly recommended. If you like Dogfish head 120, you’ll love this one at half the price.

A wonderfull brew with taste evolution. I had a vertical beer tasting of 8 different years on the same day. I had 8 different tasts. Since that day this is one of my favorites

Anyada 1987. Genial mostra del que pot donar de sí una gran cervesa preparada per envellir. Notes de mel, cremositat, sense carbònic. Per prendre amb postres o com a copa digestiva. Embriagadora, sublim.

2009 : Deep amber beer. Extremely tasty, AROMA : Caramel, pine, lightly toasted. Heavy, bitter and hoppy. Full body, creamy. 2010: Same with a little more spicy. Extra long finish... THE beer to taste!

Almost looks like apple juice on the pour. Heavy apple and raisin in the nose. First taste is heavily malty, then candy aple, caramel. Finishes with a dark fruit and honey sweetness turning sour near the end. Warming alcohol presence completes this great brew. I REALLY dig the sweetness mixed with slight sour in this beer. One of my new favorites!!!!

Consumed at Kulimator in May 2006
Deep purple colored body with a still white filmy head. Very robust nose full of scotch, port and sherry, with notes of black cherry and old oak casks. Thickness and texture, while expected it to be huge, is silky, tannic and wine-like. Rich, silky, oily, resinous... PERFECT palate. Was told that this was the favorite beer of Dirk Van Dyck, who runs Kulminator, and I can see why.

My ratings of the 2007 vintage (tasted young) are probably in the 4.0 - 4.3 range.

Another amazing beer from De Dolle. A heavyweight ale loaded with candied fruit character which matches its sourness perfectly. World classic.
