Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

From Bottle, poured at the 2006 Pizza Port 12 Hour Belgian Beer Party. Beautiful orangish copper coloring with a nice, short brilliant white head. Full of bubbles, which churn the yeast into a flurry of snowy cornmeal. Aroma of fresh orange blossoms dancing with sourdough bread. Nice creamy mouthfeel and texture on the tongue. Tons of clove and white pepper spice tingle my tongue. Final hoppy smack of fresh grass, coriander, and other Belgian spice characters. Delicious, classic example of my favorite style of beer.

Malty caramel aroma mixed with some plum. Average Frothy off-white head with medium lacing. Hazy flat body with huge particles floating. Medium brown/amber color. Light sweet initial flavor with a acidic finish. Medium bodied with a moderate astringent feel and a heavy alcoholic kick at the nose.

2005 Bottle opened for sharing. Opened with a strong hiss and nice esters however the carbonation was low - poured with almost no head at all. Looked attractive with a orange hued beer with lots of yeast Nose included lots of sweet fruits like ripe pears, yeasty notes, caramel like notes along with some peppery spices and a touch of tang. Impressively the big alcohol is hidden well Taste: Lots of the sweet esters in the nose show up the sugary sweetness wants to overpower the other esters. Palate: Felt thin on the palate the lingering notes were briefly peppery and like pears before yielding to the residual sweetness. Overall: I was a little let down I guess I had too many expectations... not a fair way to judge a beer I suppose. This one (maybe the bottle I had) came across more like an English Barleywine in all characteristics from nose to high FG than anything like a Belgian Strong Ale.

2005 Bottle from brad, thanks! Cloudy orange in color with lots of floaties, big head lots of carbonation. Aroma was light summer time fruits with some spices. Taste was orange, lemon, spicyness with a little bitterness. Average texture, easy to drink. I would of never guessed it to be 12 percent...Good brew!

Bottle thanks to GMCC2181. Thanks for sharing. Poured a hazy amber color with nice big white head and lots of sediment. Aroma was spice, fruity, and yeast. Taste is sweet and fruity with nice smooth finish with alcohol warming. I enjoyed this one a lot.

Cute snowman on the bottle :) Pours a Amber colored hazy body with huge particles floating about. Lots of sediment on the bottom. Frothy good sized off white head. Aroma of sweet malt and carmel. Flavor is initially sweet with strong alcohol on the finish. Kiind of a sour milk finish. Light to medium body. Soft carbonation. Not a bad beer. Rochefort was way better.
