Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Nose of holiday spices, malt sweetness and toffee. Taste is very similar almost like a thick saison for the sseason. Pour was murky brown and had a nice lingering head that left some serious alcohol lacing on the glass.

Vintage 2013. Mala pianka drobinki osadu rozchodzace sie po pokalu. Kolor ciemno zlocisty aromatyczny pigwowy i nieco biszkoptowy. W smaku slodkawe, ale z przelamaniem goryczkowym. Finisz dlugi zalepiajacy podniebienie rozgrzewajacy alkohol. W smaku tej mocy sie nie wyczuwa. Klasyk wspaniala rzecz na rozgrzanie w cicha zimowa noc. polecam

Bottle from Binny’s in Bloomingdale, IL. Murky golden-orange pour with a smaller white head - doesn’t necessarily look like much. But then you smell it, and out jumps loads of candi sugar, apple, honey, maybe some plum. Sweet for sure. Taste is very similar, quite sweet, a touch boozy, and some yeast. This is super tasty.

Mmmmmmmm this is an awesome beer! Very sweet with aromas and flavors of honey, sugar, peach, grape and spices. Dry and slightly bitter finish. Despite the very high ABV the alcohol is barely noticeable. Excellent beer. Bottle from 2012

2007 Edition 330ml bottle served in a Trappist chalice. WOW! Strong smell of strawberries and grapes at the moment I was pouring it. A: Very nice hazy amber color. A huge bubbled beige head and many lacings left S: Fantastic. Peculiar. Black fruits and oak are VERY evident. Moderate alcohol despite the high ABV. Belgium yeasts T: Again, fantastic. Very peculiar. Fruits and Belgium yeasts are evident. Oak. Sweet upfront (little bit chocolate). Dry aftertaste M: Heavy body. High carbonation D: Wonderful beer. Bring me a cask! --- 2008 Edition (2010.12.28) 0.33l bottle served in a chalice. A: Very nice hazy orange color. The Dolle’s famous winter beer, a classic since 1982, with off-white, regular, relatively stable, sticky head and orangey amber colour, hazy. Perfumey, tempting aroma of orange, pineapple, ripe peach, amaretto, flowery hops, spiciness, whisky; very vividly fruity taste, almost like fresh orange juice, quickly becoming yeasty, spicy and malty, honeyish, slick and creamy mouthfeel, dry finish with floral, aromatic hops and lots of booze, but fortunately not becoming wry, long and satisfying. The older version of 8,1% ABV, made with Rodenbach yeast and basically a blend of old Boskeun beers, was better still, more balanced and less alcoholic. Has a great ageing potential, I hartily recommend vertical tasting of several vintages. Which gives me an extra argument to state that this beer deserves to be classified as a barley wine rather than the somewhat meaningless ’Belgian strong ale’...
