Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Bottle. Yikes. Smells like apple juice, and as it warms apple juice with alcohol, prune, and molasses swirled in. Flavor just kind of weird with these flavors dominating and never meshing. Sugary and somewhat hot. Almost turned into a drainpour, but I soldiered on and it improved to drinkable and a few sips were actually pleasant, but at the end of the day I still found it to be a bit of a mess.

12oz bottle at Redlight Redlight (Thanks Teege). Pours a dark amber with a huge long lasting head. Slightly tart aroma with huge amounts of yeast and dark fruit on the nose. Taste is really incredible. Dark sugar, some tart apple, berries, yeast and figs. Very low bitterness, and the alcohol is nonexistant despite the 12%. Truly an incredible beer.

I meant to hold on to this bottle till winter, but hey it’s only 98 degrees today. Pours a cloudy orange with a very thick and creamy white head and a layer of sediment at the bottom. The aroma is very full and rich; tons of yeast, very sweet fruit and candycanes. The taste is also quite powerful; a very sweet candy flavor, with some chocolate and tons of strawberry and prune flavors. There is a ton of alcohol warmth here, also some peppermint and cloves. Very nice. I always enjoy De Dolle and this was no exception. This beer is just what it should be.

33cl bottle. Appearance reminds me of Achel Blond with a head that leaps out of the bottle. Great funky nose plus yeast and banana aromas. HUGE flavour that is really hard to place: spicy, sweet, tart and warming alcohol. The 12 ABV barely noticeable. Great beer.

a little weird to be drinking this in June...but hey. Pours a cloudy light orangy gold with heavy sediment and very little head. (poured too slow) Aroma is candied fruit, apple cider, light banana & yeast. Flavour is sweeeet, almost meadlike at times...honey tones, spicy malt and yeast tones. Light alc. bitterness in finish which is surpisingly clean. Very interesting brew.

Bottle. Dank the 1996 version in 2007 its 11 years old!! To bad this beer is past its prime the sourness and funk have died down, the acidity is low, the etoh goes relatively undetected whihc is a huge plus. No real hop character. Tastes a bit woody and metallic. I am a bit unsure of how well this bottle has been kept as i blow the dust off it. I plan to rerate this at some point.
