COMMERCIAL DESCRIPTION
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Dark honey-coloured but troubled liquid with non-sticky small white foam. Fruity sweets and other sugars. Some acidity that in this case is ideal and needed as a taste enhancer. Too high on alcohol for the palate present. Impression that it is a bit too young to drink now. Bitter palate not very impressive. A bit overrated to my opinion. Will stocking improve it? I have no confidence in that. Okay for Christmas 2009, better for 2010, is what I have to say.

33 cl, flaske, 12,0 % ABV, købt i Den Belgiske Ølbutik i Vanløse, 15. december 2014. Karamelfarvet og ufiltreret belgisk juleøl med minimal og flygtig offwhite skumtop på 3-4 mm. Svinder smukt til lidt bobler i overfladen og en lille kant. Rolig i glasset. "Smuk" og velduftende aroma af frugt bl.a. banan, kaktus, marcipan. Vinøs. Majestætisk smag! Let syrlig sødme og veltilpasset bitterhed. Kompleks øl. Solid alkohol i smagen, men elegant integreret. Opsummering: medium til stærk sødme, medium bitterhed og let syrlig. Umådelig veltilpasset karbonering, som er et godt stykke under medium og giver en let perlende fornemmelse i munden. Kroppen er rund og fyldig og konsistensen tyk og klæbrig. Lang bittersød eftersmag. Dette bryg er sødt, men mesterligt udført.

On tap at the Birre Sotto l'Albero festival in Rome-ITALY (Macche and Bir&Fud). Pours golden hazy with a compact white foamy head. Nose: wine most under fermentation, peers, cellar, pungent pepper. De color anaranjado y reflejos ambarinos. Presenta una buena formación de espuma y estabilidad. Presenta turbidez. En nariz presenta aromas intensos a frutas que recuerdan a orejones, melocotón maduro y ténues notas melosas. Aparezen trazas suaves trazas de alcohol. En boca presenta buena correspondencia con el aroma aunque el alcohol está menos presente ya que se encuentra muy bien integrado en el conjunto a pesar de su 12% de alcohol. Buen cuerpo y carbonatación media. Su final es seco y con generosas dosis de malta en el retrogusto. Deja una suave y agradable sencación de calor al pasar por el esófago. Un GRAN cerveza. Botella 330 ml

Aroma: banana, spices, caramel, intense sugars. Appearance: hazy, pale gold, medium, frothy, white head. Taste: medium sweet. Palate: quite intense carbonation, malty sweets intensify, caramel, some yeast. Overall: outstanding Belgian Strong Ale, amazing taste and palate. Bottle from Beers of Europe, Kings Lynn.

33cl teku. Pours a small to medium white head, dark orange peachy cloudy colour. Smells sweet malty, extremly fruity, candied sugar, yeasty, champagne like, leathery/woody, light pleasant alcohool; that’s very nice and really unique. Tastes white wine grape, malty, peach, yeast, belgian, candied fruit; medium+ sweetness, perfectly rounded by a low bitterness and low to medium, nice and intresting, sour acidic note. Medium body, low carbonation, Supreme drinkability (its 12%) !!!! A very original, complex, classy and rich brew, amazing

Bottle 2014: Nose is orange, candy sugar, very strong cloves, apple, slight nut, grapes,. It’s a perfect nose for a Christmas beer. Taste is very sweet, barley wine like in some ways, with strong orange (with a little acidity which stops the beer being cloying.) green apples, apple brandy, , peach, grape, pronounced barley sugar, honey, leading to a little oak and floral tones. The finish is perhaps a touch short. Edit: As I got through the bottle the orange juice and barley sugar flavours took over, and the beer lost some of it’s complexity. It’s still a very good beer, and oj is an interesting and unusual approach, but I’m not a huge fan of the oj taste. A complex and interesting beer, which stands out from other Christmas beers with a deftness of touch and a greater range in the taste profile. The beer is exceptionally balanced.

An interesting beer indeed! cloudy orange-amber. Flakes of brown-gray sediment can be seen listlessly bouncing along the bottom of the glass. A film of tan head that very quickly fades to nothing. Some bubbles are seen to rise, but there is no staying power in this head. Aroma is candy, moss, biscuit, some spice. Some lactic seems to come through as well (which upon a second read is consistent with the brewer’s description), although this isn’t apparent in the flavor. Flavor is light brown candy, some general spice, even a bit of bread crust and white raisin, prune. And a bit of hot rummy alcohol to top it off. A bit bitter in the aftertaste (spicy hops.) Palate is heavy, syrupy, with a moderate carbonation and light associated burn, Take a bit of the weight of the body off, but not enough to balance it. It’s a bit much actually. Weak points are head retention, and slightly oppressive body and sweetness. A very nice and interesting sipper. Drink in cold weather. (It’s cold here in Providence now, but alas, my heat is stuck on!

0,33l fles geopend op sinterklaasavond, troebel amber met een witte schuimkraag. Geur is zoet karamel en alcoholisch met ook stal. Smaak is zoet en mist diepgang, zeker er is een lading kruidigheid en gist aanwezig, maar de alcohol overheerst. Body is wel vol voor een dergelijk zoet bier. Absoluut niet mijn stijl, voor de liefhebber wellicht een goed bier, ik vind het zelf de aanschafprijs zeker niet waard.

Pours orange with almost no head, looks like lemonade. Aroma very high on caramel, nuts, very sweet, lovely smell. Taste kicks in with caramel, nuts, sugar. Turns into haeavy alcohol and lasts sweet in the mouth for a long time.

Cervesa amb aroma i gust molt complexes, destaca un toc a àcid làctic, la cervesa evoluciona molt bé, recomanable beure-la amb tranquilitat. Cerveza con aroma y sabor muy complejos, destaca un toque a ácido láctico, la cerveza evoluciona muy bien, recomendable beberla con tranquilidad.
