Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Bread, caramel, brown sugar, and Belgian yeast in the aroma. Flavor starts sweet and bready, with fruit, and caramel. Ample carbonation gives this a creamy mouthfeel. More fruit, spice, and a little drying alcohol in the finish, but not nearly as much as you’d expect given the strength of this bad boy. Tremendous.

hazy bright amber colour, minimal off-white head; aroma of dried fruits, mostly figs, some plum, raisin and apricot, vanilla, caramel and floral notes; taste is also complex with dried fruits, syrupy sweetness, vanilla and spicy alcoholic notes; excellent ale!

Ambar anaranjado. Mucho sedimento. Dos dedos de espuma poco consistente. Aroma a miel licor y caramelo. Carbonatacion alta. Sabor predominante a sidra, y muy alcoholica y amarga. Dura.

Bottle, 330 ml from Roybeer, Milano. Pours golden with white head. Fruity, bit yeasty spicy. Sweet. Not bad, but somehow I expected more.

Pours cloudy pale gold with a short, short-lived white head, minimal lacing. (3/5) Nose is boozy dark fruit, candi sugar, spices, green apple. (6/10) Taste is moderately strong sweet, mild tart. (6/10) Medium slightly oily body, moderate to low carbonation, lingering boozy finish. (3/5) Well, subtle this isn’t - nor is it light, refreshing, or any of the other adjectives one normally associates with the beers of spring. No, this is very firmly a winter beer - one appropriate for lighting a fire in your belly as you gingerly sip it during the long cold months of torpor. And at a beefy 12%, there’s fire aplenty. I don’t say this often, but this might be too emphatic a beer - a little more even-handedness and balance would go a long way here. Still pretty good, mind you... (12/20)

J’en suis encore tout retourné !! Cette bière est un chef d’œuvre. Un beau col de mousse persistant. Une bouche sirupeuse avec des arômes de genièvre et d’épices, un arrière goût qui vous fait voyager dans les fleurs de houblon. Je suis impressionné par cette merveille, par cette brasserie et même par cette Belgique !!!

33cl bottle at Dulle Griet, Gent. Pours slightly hazy deep golden with some sediments and a fairly modest head. Complex somewhat earthy and fruity aroma with notes of dried fruits, Belgian yeast and spices. Sweet, earthy and surprisingly well balanced with complex flavours and a certain dryness in the finish. Full bodied with fairly soft carbonation. Heavy on the sugar and the alcohol, but well integrated and surprisingly well integrated.
